The other day I spotted Lean Cuisine Salad Additions and curiosity gripped me tight. I try to eat a salad at least once a day, but I'm not very creative, so I was excited to see what the Southwest-Style Chicken Salad Additions would be like.

Inside the packaging are 3 pouches. One has the dressing, frozen since this product is kept in the freezer. There's also a package containing the chicken, black beans, corn and peppers; and another with tri-color tortilla strips. The directions are pretty straight forward. Put the frozen "chipotle ranch" dressing in water to thaw, microwave the pouch with the chicken, then add this to a bowl with lettuce (which you provide) along with the now thawed salad dressing and tortilla strips.

The result is visually striking and I have to say, it tastes as good as it looks. The chicken is tender yet still firm, and all the ingredients work well together. The dressing is a little spicy, which is expected of something that bills itself as "Southwest-style" and I must say I enjoyed the amped up salad.

Each package of Lean Cuisine Southwest-Style Chicken Salad Additions provides 260 calories from 9 grams of total fat, 1.5 grams of which is saturated (14% and 9% of the daily value), 590 mg sodium (25% of the DV), 4 grams of fiber (16% of the DV), 5 grams of sugars and 18 grams of protein.

Right now there is a printable coupon to get $1.00 off the purchase of 3 varieties of Lean Cuisine Salad Additions at Target, where it retails for $2.39. I really enjoyed the Southwest-Style Chicken and I'll be using the coupon to try some of the other varieties. I wonder which will be my favorite?

Holla-holla for coconut curried chicken! This is clean eating ya’ll. After my 3rd curried-dish attempt using 3 different types of curry, this Greedy Recipe ranks up there with “Hot-dang! Gimme s’more of dat!”

Don’t you wanna hot-dang with me?

Coconut curried chicken is flat abs friendly. It’s also quick & easy, especially for packing lunch. I prep this meal around 6am before my morning workout. It’s time to eat clean and prosper…

COCONUT CURRIED CHICKEN INGREDIENTS (serves 1)

4-5 ounces chicken breast. sliced or cubed. the thinner the pieces of chicken, the better.2 cups raw, fresh cabbage. sliced/chopped2 garlic cloves. smashed, then chopped1 handful of fresh kale, chopped1 small onion or 1/2 medium onion2-4 tablespoons coconut milk2 heaping teaspoons curry seasoning (not curry powder)

DIRECTIONS

Unleash your inner ninja-knife skills by prepping all ingredients with the required slicing & chopping techniques. Be sure to start with the cabbage and garlic first, as letting those ingredients sit for a few minutes after chopping adds to their health benefits.Add the chicken and all chopped veggies to the pan.Add coconut milk and then slap in the curry seasoning.Stir fry on medium heat until chicken is thoroughly cooked and cabbage has softened.

IMPORTANT NOTES

The coconut milk helps to keep the dish moist. It’s also a substitute for oil.Choose a paste-ish type of curry and that’s mixed with extra spices (see the ingredients for Spur Tree Curry Seasoning). Do not use plain, dry curry powder for this recipe.All ingredients are loosey-goosey. No need to be all scientific and technical about it. Add a little more or a little less of each ingredient depending on your taste.If you’re feeling kinda greedy, go on and add cooked rice to the final dish to make it heartier.

“Hotdogs, cheeseburgers, pizza sticks, cheese burritos, chicken fingers, fish sticks…”

Food.
Is there a subject more complex or convoluted? Politics, religion, the differences between the sexes…those subject’s got nothin’ on food.
We need food to survive. Of course. But it’s not like we can take a pill of food in the morning like a birth-control pill and hope it works. Food demands our attention. And it has some people’s attention more than others (people such as me, a confessed foodie).
We love some food and we hate some food, but there’s never a consensus. We defend the foods we love like they were some kind of holy grail. I’ve listened to people argue over barbecue sauce recipes, for cryin’ out loud! That’s not love. That’s obsession.
There are times we cook food and times we grab food. At our most determined, we plan and implement a diet plan, and when that determination wanes, we drive through McDonald’s. We seek the magical comfort of mashed potatoes while standing firm in the face of cheesecake. We are conflicted.
When it comes to food, we all have choices. All of us, that is, except for the little ones. Those folks who are too young for debit cards, too young to voice their opinion (except to put their hands in front of their mouths in protest), and who rely on us…adults…to make the best food choices we can for them.
Meet Jessica. Jess is a 27-year-old mother to 11-month-old Sarah. Sarah attends a Class A daycare in Louisiana while Jess and her husband, Mark, work. Until now, Jess has provided the daycare facility with all of Sarah’s foods: breast milk and baby food.Now that Sarah is ready for “table” food, the daycare insists she eat what they provide. In fact, the government requires that Sarah’s lunch be delivered via the daycare. No home food is allowed without a doctor’s note. The problem is that Jessica isn’t real happy with the daycare’s food choices. It’s not that Jess is a picky, hard-to-please helicopter parent. Not at all. Jess is simply a food-conscious woman who wants her child to have every advantage of healthy, wholesome foods.
And to Jess, hotdogs, cheeseburgers, pizza sticks, cheese burritos, chicken fingers and fish sticks are not healthy, wholesome foods.

Anyone who has lost weight and is maintaining their weight probably didn’t get to weight loss and maintenance by eating a lot of hotdogs, cheeseburgers, pizza sticks, cheese burritos, chicken fingers, or fish sticks. But I’d be willing to bet they got there (raising my hand!) by eating hotdogs, cheeseburgers, pizza sticks, cheese burritos, chicken fingers, and fish sticks. Frequently.
Our Standard American Diet of fat and simple carbs is flat out wrong. We know this. And yet, it is perpetuated in our schools while we sit around scratching our heads wondering why we have an obesity epidemic!

Shame on school districts. And more appropriately (despite Michelle Obama’s efforts), shame on our government for sanctioning this disease-by-food policy.

Well, it looked appetizing, and so I decided to try it for lunch.

I haven't been disappointed with a Weight Watchers SmartOnes Artisan Creations meal yet - having enjoyed the Stone Fired Pepperoni Crust Pizza (Review) and Southwestern Style Chicken Fiesta Grilled Flatbread (Review) - and this entree lived up to my expectations. WW really hit on a winning combination with a slightly sweet marinara sauce and the roasted bell peppers which I think was the star of the show - but the sauce was a close second. The chicken chunks were plentiful as well, but I think WW could make a delicious non-meat version of this as well (if they haven't done so already). I really enjoyed this for lunch, and it was $2.50 well spent.

Each Weight Watchers SmartOnes Artisan Creations Chicken Marinara with Mozzarella Cheese Grilled Flatbread provides 290 calories, from 6 grams of total fat (9% of the daily value for saturated fat), 1.5 grams of saturated fat (7% of the DV), 640 mg sodium (27% of the DV), 3 grams of fiber (10% of the the DV), 7 grams of sugars and 18 grams of protein. It's also has 7 PointsPlus value. The ingredients list isn't exactly "natural" in fact, if you're not into chemical-sounding names, you probably won't be a fan of this.

As I mentioned before, I purchased this meal for $2.50, and would certainly buy it again. It's really tasty, has less than 300 calories, and a generous amount of protein.

Lean Cuisine Thai Style Chicken

Lean Cuisine Thai Style Chicken is described as, "roasted chicken tenderloins in a creamy Thai-style sauce with rice." It's part of the "Cafe Cuisine" line of LC - which they say delivers ... bold dishes which bring together premium meats, farm-picked veggies and gourmet sauces for delicious flavor in every forkful.

After following the really complicated directions - "microwave for 4 minutes and 30 seconds" - I got a a meal with the chicken swimming in so much sauce that it's hidden. But once you coax it out with a fork, you'll find 4 or 5 large pieces of tender meat. The sauce itself is a typical creamy & slightly sweet Thai sauce, which went well with the chicken and the rice. But for my tastes, the rice was a bit too mushy, or maybe that's what the Thai style is like. Still, overall, I enjoyed this entree for lunch, although not as much as the Weight Watchers Smart Ones Thai Style Chicken & Rice Noodles (Review).

Each Lean Cuisine Thai Style Chicken entree (255 grams) provides 260 calories, 4 grams of total fat, 1 gram of which is saturated (6% and 5% of the daily value), 540 mg sodium (22% of the DV), no fiber, 9 grams of sugars and 21 grams of protein.The ingredients list is fairly typical, starting with blanched enriched long grain paraboiled rice.

I purchased a box of the Lean Cuisine Thai Style Chicken for $2.50 and at that price, I would buy it again. Although I wasn't wowed by this one, it wasn't too bad - just felt like it was missing something - maybe a little hot pepper sauce to make it a little more spicy.

Get ready for a lot of Frozen Dinner Reviews, because I think I picked up one of everything from my local grocery store a few nights ago. I love when companies try to have more exotic flavors, so one of the 1st products I tried from my haul was Weight Watchers Smart Ones Thai Style Chicken & Rice Noodles.

The prep directions said to microwave for 4 minutes 30 seconds, which is what I did. I was actually very pleasantly surprised by how good this meal was. It's simple - rice noodles, carrots & chicken in a "Thai style" sauce - and in this case, the simplicity paid off. There small chunks of chicken provided was quite plentiful, and it was well saturated with in a brown sauce. Loved the sauce - not as sweet and creamy as I expected (or dreaded), and when everything was mixed together, the sauce was the glue was what made the dish pop. It was flavorful with a hint of pepper after a few mouthfuls. The rice noodles on their own were quite bland - as all rice noodles are, so make sure to really mix everything together. The matchstick size carrots actually remained quite firm even after 4 minutes in the microwave, and they added a nice crunch to the meal.

I had this for dinner, but the 255 gram entree looked a wee bit small, so I added a side of Pictsweet Steam'ables Baby Sugar Snap Peas, which rounded out the meal nicely.

Michelina's Lean Gourmet Chicken Club FlatBread

Michelina's Lean Gourmet cost just $1.00 a few years ago when I first reviewed them, and imagine my surprise looking over the selection in the frozen food aisle, seeing that they still cost $1.00. And they are (supposed to be) a healthier alternative. I decided to try out their Chicken Club FlatBread.

This was a decent "flat sandwich" - but let's face it Michelina's, it cannot be folded in two as pictured on the box. One it would be way too messy and the sticky cheese is everywhere and the toppings are also a bit of a mess. But that doesn't mean it wasn't good. The bread is thick and really the star of the show. It's the type of bread you tear off big chunks off and eat. And yeah - there was chicken and a smattering of what looks like bits of bacon (but didn't really taste like it) and lots of cheese as I said before.

Each Michelina's Lean Gourmet Chicken Club FlatBread meal provides 290 calories, 8 grams of total fat, 2.5 grams of which is saturated (12% and 13% of the daily value), 750 mg sodium (31%), 2 grams of fiber, 4 grams of sugars and 15 grams of protein.

Muir Glen Organic Chicken Tortilla Soup Review

I was looking at my soup options in the supermarket the other day - in fact, there was quite a limited selection - and I decided to pick up Muir Glen Organic Chicken Tortilla Soup, in addition to a few others. I was curious to see whether a canned "organic" soup would be any different from the rest of canned soups around.

I heated up the contents of the can in a small pot on the stove, and when I had my first spoonful, all I could say was, Holy jumping jelly beans this soup is delicious!! It's chock full of rice, corn and black beans - not so much the chicken, but I honestly didn't mind, because the soup is so flavorful. There's also a spicy kick to it that adds some extra oomph. The soup was so good I went back for another helping - the can I bought (411 grams) provides 2 servings.

Each cup of Muir Glen Organic Chicken Tortilla Soup provides 130 calories from 1.5 grams of fat, 0.5 grams of which is saturated (3% and 2% of the daily value), 790 mg of sodium (33% of the DV), 3 grams of fiber and sugars plus 7 grams of protein.

The ingredients list is organic and all natural, starting with water, tomatoes and cooked chicken meat. Other than it being a bit high in sodium, I'm a happy camper when it comes to Muir Glen Organic Chicken Tortilla Soup.

I purchased a can for $2.50, and there was a sticker on it for $1.00 off 2 cans, so my final price was $2.00. I'm sure glad I bought 2 cans of this because it's really so delicious, and I intend on buying this again.

Kettle Cuisine Thai Curry Chicken Soup is described as having, "All natural chicken, bamboo shoots, mushrooms, bell peppers and brown rice are combined with aromatic green curry, lemongrass and coconut milk in our made-from-scratch chicken stock to create a perfect balance of authentic Southeast Asian flavors." Well, that sounds fantastic to me, so this was what I pulled out for lunch a few days ago.

Sodium: 560 mg, 23%

This soup comes frozen, and the directions say to run it under water for 30 seconds to loosen it from the bowl, then add it to a pot and heat, stirring frequently, which is what I did. Or you could zap it in the microwave for 3-4 minutes. This gluten- and dairy- free soup certainly delivers on the Thai curry flavor - which to me is very distinctly different from an Indian curry (which is what I grew up on). Thai curry is more aromatic, sweet and slightly creamy in texture and taste. It took me a while to get used to Thai curry actually, but I do like it. And this soup - well, it's very full bodied with the rice, chicken, bamboo shoot and all the other ingredients. Totally delicious.

I loved the taste, but was not crazy about the amount of saturated fat - 8 grams or 40% of the daily value per 10 ounce serving (1 container). Each serving of Kettle Cuisine Thai Curry Chicken Soup also provides 330 calories, 11 grams of total fat (17% of the DV), 560 mg of sodium (23% of the DV), 4 grams of fiber (16% of the DV), 2 grams of sugars and 13 grams of protein. The ingredients are all natural.

I received samples of this soup to review, and I do love this take on chicken soup as it's hearty and zesty, but, with all the fat, and a retail price of $4.59, I wouldn't buy this just to eat as lunch. As a basis for a bigger pot of Thai curry soup - yes - but solo, I would probably spring for V8 SouthWestern Corn Soup or Pacific Natural Foods Organic Roasted Red Pepper and Tomato Soup, both of which cost less, but also have stellar ingredients.

One of my favorite places to sit and get some work done, is at Panera Bread. The Panera Bread in my 'hood is great because the atmosphere is very inviting, and the staff makes everyone feel comfortable - no matter how long you're in there hunched over a laptop. Since I'm trying to incorporate more vegetables in my daily eats, I decided to try the Panera Bread Chicken Caesar Salad. It's described as having all-natural, antibiotic-free chicken, romaine lettuce, Asiago-Parmesan cheese, homemade Asiago Cheese croutons & our special Caesar dressing.

Total Fat: 29 grams, 44%
Saturated Fat: 9 grams, 45%
Sodium: 820 mg, 34%
Carbohydrates: 29 grams
Fiber: 3 grams, 12%

I ordered the half portion, along with a (half-portion) of a sandwich, but just the half-portion of salad was a big serving - so the full thing would certainly be very filling. The only modification I made was to use Reduced-Fat Balsamic Vinaigrette Salad Dressing instead of the Caesar ... am I the only one that doesn't like creamy dressings?! The salad was oh so tasty - The chicken comes well seasoned - you can see it on the big strips of chicken - and the rest is your basic lettuce & shredded cheese.

One really nice thing about Panera Bread is that the nutrition information is readily available at PaneraNutrition.com - and you can easily switch out ingredients and see how they affect the nutrition facts.

A full-sized serving of the Panera Bread Grilled Chicken Caesar Salad provides 510 calories from 29 grams of total fat, 9 grams of which is saturated fat (both 45% of the daily value), 820 mg of sodium (34% of the DV), 3 grams of fiber, 2 grams of protein and 37 grams of protein.

To improve the nutrition facts of the salad - get rid of the croutons. This will remove 170 calories (now that huge salad is 340 calories), 7 grams of total fat, 2.5 grams of saturated fat & 320 mg of sodium. The Caesar dressing also contributes 150 calories, 16 grams of total fat & 2.5 grams of saturated fat. The best substitution is with the Asian Sesame Vinaigrette which provides 90 calories, 8 grams of total fat, only 1 gram of which is saturated. Plus order it on the side as you might not need to use as much

As I mentioned, the portion is huge and rightly so because Panera Bread does not have the cheapest prices - this salad cost $7.99. I would buy this again, and make the above substitutions, because I know that I will be full for a few hours after.

We have done MANY Lean Cuisine reviews, but LC is one company that's constantly adding new products & improving existing ones. Recently, the company let me know about the Lean Cuisine Fajita-Style Chicken Spring Rolls, and I was really stoked to review it. The description reads, "white meat" chipotle chicken,corn,black beans,bell peppers and onions.

Let me tell you, when this first comes out of the microwave, the ends of the spring rolls are not a pretty sight of chicken, corn and onions. Instead it's like a blackened, congealed mass, and after microwaving, there are some oily patches on the "crisping sleeve". Nevertheless, if it's one thing I've learned - it's that sometimes the most unappetizing looking products taste the best (just check out Tasty Bite Madras Lentils Review). So I bit into a roll and was rewarded with a delicious, crispy, spring roll. I could taste the different textures of crunchy corn & chicken (which really didn't have a taste). It wasn't very spicy, but the more you eat, the more the spiciness comes out. Overall, I liked the taste BUT there is no way 1 serving is going to be a filling lunch or dinner. It's either eat both servings (2 serving come in a box) or pair 1 serving with something like Amy's Organic Fire Roasted Southwestern Vegetable Soup.

Healthy Choice Grilled Basil ChickenMy school offers all of about 7 frozen dinners and when I get tired of sandwiches, pizza slices and burritos, I reach for a lighter option from the little freezer section off in the corner of the dining hall. One of the 7 choices is Healthy Choice Cafe Steamers Grilled Whiskey Steak Review, received good reviews, so I decided to stick with a chicken theme and try Healthy Choice Cafe Steamers Grilled Basil Chicken.

Have you ever tried Healthy Choice Café Steamers? They are quite amazing, in the world of frozen food. The veggies, pasta and chicken sit in one little compartment, while the sauce bubbles up underneath. This results in large chunks of perfectly al dente zucchini and red pepper. The chicken was amazingly tender and there was a lot of it ... some of the best chicken that I have ever tasted from a frozen dinner. The pasta was just slightly past al dente, but it was still enjoyable. All of the components were unfortunately brought together by the sub-par tomato basil sauce. Come on, Healthy Choice, give us some spice!

The ingredient list is shorter than some, but longer than something an all natural/organic meal would boast.

As the temperatures dip here in the North-east, and winter practically banging on our doorstep, it's time for me to seek solace in my favorite cold weather lunch - the soup & panini sandwich combo. I have a panini maker at home, and there are a few brands of frozen panini's that I really enjoy - like Lean Cuisine Chicken Spinach and Mushrooms Panini and Healthy Choice Tomato Basil & Mozzarella Panini. I decided to buy a few I hadn't tried before, hoping to add a few new favorites to my list. The first one I tried was the Lean Cuisine Chicken Club Panini.

This is described on the packaging as, "white meat chicken with crumbled bacon, tomatoes, cheese & ranch style sauce on sourdough bread." After a few minutes in the microwave, and another few impatient minutes to let it cool a little, I took a bite. This was not bad at all. Lots of cheese & chicken, but I really didn't taste any bacon - although I saw a few red bits on the sandwich (could have been tomato or bacon). I did taste the sauce, which wasn't overpowering, but added a delightful finish to the experience.

My lunch-time reading material was the nutrition facts on the back of the box. Each sandwich provides 360 calories, 9 grams of total fat, 3.5 grams of which is saturated fat (14% and 18% of the daily value), 680 mg of sodium, 16% of the DV for fiber, 24 grams of protein and 7 grams of sugars.
