Greedy Recipe! Coconut Mini Cinnamon Rolls

My hubs doesn’t like this recipe because it doesn’t use butter or granulated sugar. He’s freakin batshit. The rest of the greedy fam loved my Coconut Mini Cinnamon Rolls. C’mon, let’s gnaw on these together….

THE INGREDIENTS…

1 cup powered sugar: don’t be scared of this measurement, because you’re only going to use as much icing as you like. There may be some leftover.2 tbsp skim milk or almond milk1.5 tsp vanilla extract

DIRECTIONS

Preheat Oven to 350 degrees.Lay seamless dough flat on aluminum foil or parchment. If using crescent rolls, piece them together to form a seamless dough.Smather on melted coconut manna (melt on low heat in a pan on stove), coconut sugar and cinnamon in that order. You may need to you use your hand to spread each layer evenly across the dough.Roll the dough longways into a tight log.Cut 1-inch sections and place on cookie sheet that has been very lightly spray or oiled.Bake for 11-13 minutes.Prep icing ingredients by mixing all together while the rolls bake.Drizzle icing onto warm rolls and feed your stomach this wonderful piece of heaven. Ahhh!

Here’s the layer of coconut manna, coconut sugar and cinnamon spread out on the dough. Don’t over-do it on the cinnamon:

Roll it into a log and cut into 1-inch sections. The rolling process can get sticky, so be patient and take it slow.

Lean Cuisine Fajita-Style Chicken Spring Rolls

We have done MANY Lean Cuisine reviews, but LC is one company that's constantly adding new products & improving existing ones. Recently, the company let me know about the Lean Cuisine Fajita-Style Chicken Spring Rolls, and I was really stoked to review it. The description reads, "white meat" chipotle chicken,corn,black beans,bell peppers and onions.

Total Fat: 7 grams, 11%
Saturated Fat: 1.5 grams, 7%
Sodium: 5800 mg, 24%
Carbohydrates: 20 grams
Fiber: 2 grams, 8%

Protein: 15 grams

Let me tell you, when this first comes out of the microwave, the ends of the spring rolls are not a pretty sight of chicken, corn and onions. Instead it's like a blackened, congealed mass, and after microwaving, there are some oily patches on the "crisping sleeve". Nevertheless, if it's one thing I've learned - it's that sometimes the most unappetizing looking products taste the best (just check out Tasty Bite Madras Lentils Review). So I bit into a roll and was rewarded with a delicious, crispy, spring roll. I could taste the different textures of crunchy corn & chicken (which really didn't have a taste). It wasn't very spicy, but the more you eat, the more the spiciness comes out. Overall, I liked the taste BUT there is no way 1 serving is going to be a filling lunch or dinner. It's either eat both servings (2 serving come in a box) or pair 1 serving with something like Amy's Organic Fire Roasted Southwestern Vegetable Soup.

Each serving of 3 Lean Cuisine Fajita-Style Chicken Spring Rolls provides 200 calories, 7 grams of total fat, 1.5 grams of which is saturated (11% and 7% of the daily value), 580 mg of sodium (24% of the DV), 2 grams of fiber, 3 grams of sugars and 15 grams of protein. The ingredients list isn't too lengthy and has mostly recognizable ingredients.

I received sample of Lean Cuisine Fajita-Style Chicken Spring Rolls but they are widely available in the supermarket aisle, and it's usually on sale - anywhere from 2 or 3 for $10.00 I would buy this again, but definitely not to eat by itself. Similar products that are just as tasty include Trader Joe's Lemongrass Chicken Stix and Kahiki Naturals Vegetable Egg Rolls.

Tasting! Pepperidge Farm Stone Baked Artisan Rolls

I loves me some carbohydrate fanfare. Don’t you? Too bad it makes my stomachs poke out and my fat cells bulge real big. Hence, the reason I choose my carbohydrate moments very carefully. The carb has GOT to be of fine-tasty quality and totally worth the chewing.

While I was shopping at the ghetto grocery store because it was near where I was headed (…to the ghetto??), I spotted some Pepperidge Farm Multi-Grain Artisan Rolls. They do, indeed, rank top notch on my carb-o-meter. Pepperidge claims the rolls are made from the “finest ingredients”, which I’m inclined to believe from the greedy tastiness.

These crusty on the outside; warm and soft on the inside (frozen) dinner rolls go from oven to Food Trap in about 8-minutes flat. But make sure there’s ample storage in your stomach chamber, because you WILL desire more than one.

The roll has and all-star blend of wheat germ, wheat bran, bulgur wheat (and more), plus flax seeds so big they wave hello. And there’s plenty of nooks and granny panties crannies for the melted buttery goodness to seep in. These could easily be sold in a lazy-azz bakery or restaurant, and people would be fooled into giving compliments to the baker.
