Greedy Recipe! Coconut Mini Cinnamon Rolls

My hubs doesn’t like this recipe because it doesn’t use butter or granulated sugar. He’s freakin batshit. The rest of the greedy fam loved my Coconut Mini Cinnamon Rolls. C’mon, let’s gnaw on these together….

THE INGREDIENTS…

1 cup powered sugar: don’t be scared of this measurement, because you’re only going to use as much icing as you like. There may be some leftover.2 tbsp skim milk or almond milk1.5 tsp vanilla extract

DIRECTIONS

Preheat Oven to 350 degrees.Lay seamless dough flat on aluminum foil or parchment. If using crescent rolls, piece them together to form a seamless dough.Smather on melted coconut manna (melt on low heat in a pan on stove), coconut sugar and cinnamon in that order. You may need to you use your hand to spread each layer evenly across the dough.Roll the dough longways into a tight log.Cut 1-inch sections and place on cookie sheet that has been very lightly spray or oiled.Bake for 11-13 minutes.Prep icing ingredients by mixing all together while the rolls bake.Drizzle icing onto warm rolls and feed your stomach this wonderful piece of heaven. Ahhh!

Here’s the layer of coconut manna, coconut sugar and cinnamon spread out on the dough. Don’t over-do it on the cinnamon:

Roll it into a log and cut into 1-inch sections. The rolling process can get sticky, so be patient and take it slow.

Coconut Manna Sweet Biscuits

This is absolutely bonkers…

…in a stomach-delightful kind of way. How could a moist, sweet biscuit that’s made with NO eggs, NO milk, NO refined white sugar and NO vegetable oil be so dang delicious?

I made a batch of Coconut Manna Sweet Biscuits. The gremlin-children stuffed their jaws and then immediately forced me to make more. I was like Aunt Jemima in the kitchen, whippin’ up biscuits in mass quantities.

With the hubs at my side (giving credit where it’s due!), he helped me come up with this recipe using Coconut Manna Coconut Manna Sweet Biscuits and Coconut Sugar Coconut Manna Sweet Biscuits.

The manna in this recipe is a substitute for vegetable oil. Manna is a “whole food made of pure, dried coconut flesh containing 12% fiber, 9% protein and nourishing fats.” It’s solid, yet melts easily into a silky, creamy, thick-buttery texture.” Ooo-la-laaa!

The coconut sugar is a substitute for the refined crap. It’s brown in color with a slightly nutty flavor and granulated texture. Coconut sugar is a “highly nutritious, rich source of potassium, magnesium, zinc, iron, and B vitamins. It is also one of the lowest glycemic index sweeteners on the market, with a glycemic index of 35, in comparison to cane sugar, which has an index of 68.”

THE RECIPE: “COCONUT MANNA SWEET BISCUITS”

INGREDIENTS (serves 10-12)

2 cups flour2/3 cups water3 tsp baking power1 tsp salt1/2 cup coconut sugar6 tablespoons semi-melted coconut manna (melt on very low heat, or it’ll burn)

For a smaller batch of up to 6 biscuits, simply cut all measurements by 1/2.

DIRECTIONS

Add all ingredients to mixing bowl and knead until thoroughly blended.Form into one big-azz dough ball.Flatten out into approximately 1/4 inch thickness.Use a cookie cutter or rim of a small cup to form biscuits.Bake at 450 degrees for 10 minutes on ungreased cookie sheet.Immediately hot out the oven, spread on additional coconut manna as “icing”.Sprinkle with coconut sugar and begin to chew. Then chew some more. You can’t eat just one. Now chew again…

Don’t worry. The biscuits are NOT riddled with sweet. It’s just a tender kiss of sweetness that’s perfect as part of a weekend breakfast or bunch, occasional snacking, or for showing off fancy baking skills to greedy guests. The recipe does contain regular white flour, but don’t be intimated by it. I don’t feed my stomachs white flour on a regular basis, so these biscuits are a nice splurge. By all means, go on and use a white flour substitute if that’s your cup of tea.

Regardless of the flour, the oil and sugar substitutes through the use of Coconut Manna Coconut Manna Sweet Biscuits and Coconut Sugar make these biscuits a hot dang delicious supah-star!

…told ya this was bonkers.

I'm currently at my folks place visiting for the week which means I have access to more natural foods stores. Yesterday, I dragged the parental units with me to the grocery store and while I was looking around, I saw Naked 100% Pure Coconut Water. They had quite a few flavors such as Lychee, Mango & Pineapple - but I was having none of that. Sorry but Phenom Coconut Water (Reviews) has permanently turned me off flavored coconut waters. So I opted to try the Naked Pure - 100% pure coconut water and nothing else added.

Serving Size: 1 container (11.2 ounces)
Calories: 80
Total Fat: 0%
Saturated Fat: 0%
Sodium: 20 mg, 1%
Carbohydrates: 14 grams
Fiber: 0%
Sugars: 11 grams
Protein: 0 grams

The packaging describes this as being produced from Brazilian green coconuts - and indeed it does taste very similar to if it were fresh and taken straight from the coconut. This is one of my favorite brands of coconut water. And each 11.2 ounce container provides only 80 calories, no fat, fiber or protein and 11 grams of sugars. It's also a good source of potassium (650 mg).

I purchased a container of Naked 100% Pure Coconut Water for $2.29, which is a little pricy for a beverage. But then again - an 80 calorie, refreshingly good all natural beverage that doesn't have gobs of sugar is certainly worth that.

Holla-holla for coconut curried chicken! This is clean eating ya’ll. After my 3rd curried-dish attempt using 3 different types of curry, this Greedy Recipe ranks up there with “Hot-dang! Gimme s’more of dat!”

Don’t you wanna hot-dang with me?

Coconut curried chicken is flat abs friendly. It’s also quick & easy, especially for packing lunch. I prep this meal around 6am before my morning workout. It’s time to eat clean and prosper…

COCONUT CURRIED CHICKEN INGREDIENTS (serves 1)

4-5 ounces chicken breast. sliced or cubed. the thinner the pieces of chicken, the better.2 cups raw, fresh cabbage. sliced/chopped2 garlic cloves. smashed, then chopped1 handful of fresh kale, chopped1 small onion or 1/2 medium onion2-4 tablespoons coconut milk2 heaping teaspoons curry seasoning (not curry powder)

DIRECTIONS

Unleash your inner ninja-knife skills by prepping all ingredients with the required slicing & chopping techniques. Be sure to start with the cabbage and garlic first, as letting those ingredients sit for a few minutes after chopping adds to their health benefits.Add the chicken and all chopped veggies to the pan.Add coconut milk and then slap in the curry seasoning.Stir fry on medium heat until chicken is thoroughly cooked and cabbage has softened.

IMPORTANT NOTES

The coconut milk helps to keep the dish moist. It’s also a substitute for oil.Choose a paste-ish type of curry and that’s mixed with extra spices (see the ingredients for Spur Tree Curry Seasoning). Do not use plain, dry curry powder for this recipe.All ingredients are loosey-goosey. No need to be all scientific and technical about it. Add a little more or a little less of each ingredient depending on your taste.If you’re feeling kinda greedy, go on and add cooked rice to the final dish to make it heartier.

Now go. Enjoy your meal and be curry-fied.

Coconut Dream Unsweetened Original Coconut Drink

I posted a "How Are You Milking It Poll" at the beginning of 2011, and 41% of voters use a non-dairy alternative - including me. Lately, I've been looking out for different coconut "milk" brands - so not surprisingly, I got around to picking up Coconut Dream Unsweetened Original Coconut Drink a few days ago. Oh - and according to the FDA, the term "Milk" is defined as " the lacteal secretion, practically free from colostrum, obtained by the complete milking of one or more healthy cows" - so I'm not correct in calling it coconut "milk" but since it's a white liquid with a similar consistency and intended purpose as "milk" - please forgive my liberties with using the word "milk" during this review.

Total Fat: 5 grams, 8%
Saturated Fat: 5 grams, 25%

Now as for the taste & texture, as with Rice Dream Vanilla Rice Drink, this coconut "milk" is very watery - more like skim milk; and the coconut flavor is much milder than in Silk PureCoconut Original CoconutMilk, but that's not necessarily a bad thing - just depends on what your preference. I didn't mind. Of course, this is unsweetened, so although I liked the taste of it by itself, I much preferred using it in smoothies and even with cereal - although it has to be cereal with some sort of sweetness, like Kashi GoLean Crunch Cereal Review for example, but not something bland like Weetabix Organic Crispy Flakes & Fiber Cereal.

Each 1 cup serving of Coconut Dream Original Unsweetened Coconut Drink provides 60 calories from 5 grams of total fat, all of which is saturated (25% of the daily value). There is no fiber, protein or sugars, and 150 mg sodium (6% of the DV). That's 20 calories less than Silk PureCoconut Original CoconutMilk (Review) and So Delicious Coconut Milk Beverage (Review), both of which have 6 grams of sugars.

The ingredients are filtered water, coconut cream, tricalcium phosphate, carageenan, gellan gum, sea salt, natural flavors, vitamin A palmitate, vitamin D2, vitamin B12 (cyanocobalomine). The added vitamins & minerals provide 30% of the daily value for calcium, 25% of the DV for vitamin B12 & D, and 10% for vitamin A.

Funnily enough, although this is "enriched" with added vitamins, this has "All Natural" on the label. Nothing wrong with that according to the law of the land, but personally, I think "Natural" should mean not enhanced in any way. I bought a 32 ounce container for $1.99 at my local supermarket, and if it were a choice between this and Silk PureCoconut, it would come down to which is cheaper because I like both. BUT, since Blue Diamond Almond Breeze Unsweetened Almond Milk (Review) has less saturated fat - that's still my go-to non-dairy :milk".

The 2 other flavors of Phenom Coconut Water that I've tried have been a lot less than phenomenal, in fact Phenom Mega V Pineapple Punch Coconut Water and Phenom Energy Acai Peach Coconut Water have tasted pretty awful. BUT, I had another flavor left to try, the Orange Guava Passion, and I was hoping that this would be the one to redeem the Phenom name.

What I found that wouldn't exactly classify this as fantastic, it was ... okay, pleasant even - at least I finished the entire bottle which is more than I can say with the other 2 varieties that I tried. The coconut water flavor is very dominant, with a hint of the other flavors coming through more in the aroma, and it's not too sweet.

Each 8 ounce serving of the vitamin and mineral fortified Phenom Mega V Orange Guava Passion Coconut Water provides 45 calories and 7 grams of sugars. There is also 100% of the daily value for vitamin C, 50% for manganese and 10% of the DV for quite a few other vitamins & minerals. The ingredient list starts with water and coconut water concentrate, and it also includes the sweetener reb A (also known as stevia).

I was sent some Phenom Coconut Water to try out and although I was less than thrilled with the Phenom Acai Peach Coconut Water, I was hoping things would turn around with Phenom Mega V Pineapple Punch Coconut Water. This is described as, "pure, naturally good-for-you coconut water made even better with a GNC boost of electrolytes."

The taste of this Pineapple Punch coconut water is not as horrendous as the Acai Peach, but I wouldn't go so far as to say this is good. There is no trace of pineapple flavoring, just a weird sort-of coconut water with some kind of generic flavoring added to it. Again, I didn't even finish the 16.9 ounce bottle.

Each 8 ounce serving provides only 45 calories and 7 grams of sugars. The ingredients list starts with WATER then coconut water concentrate followed by all the added vitamins.

I love pure coconut water - straight from the coconut. It's naturally low-calorie and rich in electrolytes (potassium and magnesium in particular). Phenom Coconut Water is a new offering from GNC, and it comes fortified with a variety of vitamins and minerals. The Phenom Energy (Acai Peach) Coconut Water is fortified to 100% of the RDA of vitamin C, vitamin B-12, Pantothenic Acid, and Niacin, plus 250% vitamin B-6.

Each 8 ounce serving provides only 45 calories - you would think it's really the perfect drink, but alas, the taste of this coconut water is less than phenomenal. In fact, I couldn't finish drinking the contents of the 16.9 ounce container. It's just ... weird. There is the underlying subtle coconut water flavor, but on top of it is layered some weird flavoring, I suppose the acai and peach which just does not work! It's almost sickening and every time I take a sip I make a weird, "this is nasty face." I'm happy I have a few other flavors to try and I'm hoping at least one of them is good - because the company sent me this and I want to be able to say good things, but so far I can't - not about the taste.

Don't take offense Phenom - coconut water is such a delicate flavor that it's hard to get right in a packaged product. I didn't like Vita Coco Coconut Water with Acai & Pomegranate either ... maybe it's something about the "Acai" flavor that doesn't go well with coconut water.

Phenom Coconut Water is available at GNC (in stores and online) at $29.99 for a case with 12. I'm not a fan of this flavor, but stay tuned for reviews of a few more flavors later this week to see if there is one I did like. But tell me, do you drink coconut water - what brand do you like?

Love Pina Coladas but hate the extra calories and fat? At over 500 calories per cocktail (and possibly a lot more, depending on what size you get), these are a nutritional nightmare. Thankfully, there's a guilt-free substitute for that high-fat, calorie-laden drink: Dannon Light & Fit Pineapple Coconut Yogurt. It might not be an exact substitute for the alcoholic beverage, but it tastes pretty darn good!

Pineapple is actually one of the ingredients too - so it's not just pineapple flavoring - but coconut is nowhere to be found. I was really amazed at how dessert-like this tasted.

I was recently sent a sample of Lima Citron Zico 100% Pure Coconut Water to try. Zico says their Lima Citron flavor has, "more potassium than a banana, four other naturally occurring electrolytes, only 60 calories per 14 ounce bottle, zero fat, zero added sugar and zero cholesterol. It is low in acidity and high in potent antioxidants."

After I got home from a long sweaty run, I opened a chilled bottle of Zico Lima Citron - doesn't that name make it sound more like an alcoholic beverage than coconut water? I took a swig and found that this is sweeter and thicker than water, so it's something to get used to. I think what gets me about this stuff is that when I hear "water" I expect ... well, water. I liked the flavoring of the lime and citrus though, and I thought it added a lot to the coconut water taste.

Each 14 ounce bottle provides 60 calories,no fat, 180 mg of sodium (7% of the daily value), 610 mg of potassium (17% of the DV), 12 grams of sugar but no fiber or protein.

The ingredients list is short and simple, 100% natural coconut water from concentrate, natural flavors and citric acid. At $2.50 a bottle this on sale, this isn't cheap, but if you're looking for a fruity hydration fix, this may be the one for you. So tell me - are you a fan of coconut water? I'm not totally sold on the taste yet, but it's growing on me - and the nutrition facts + ingredients list can't be beat. This has less sugar than the Vita Coco Coconut Water with Acai & Pomegranate and tastes better to me than the Vita Coco 100% Pure Coconut Water.
