Virtual Turkey Trot Update

Happy Thanksgiving!

I had the BEST day. Ever!

Thanksgiving is one of my favorite holidays because we get to just… be. I don’t mind cooking all day if it means I get to enjoy a great meal with my family. It’s just a fun, relaxing holiday.

I was hoping to get everyone out for my first ever Virtual Turkey Trot but with a temperature reading of 19 we decided it wasn’t a good idea for the kids. Instead I strapped on my shoes and got in a relaxing 5 miles. Sounds funny, I know,  but it’s true. With a house full of family it was nice to have a few minutes to myself. Plus I actually enjoy running in the cold. I bundle up with my hat, gloves and scarf and after a few minutes I’m comfortable.

Here I am afterwards all sweaty.

When I got back I put out the veggie tray and cheese and crackers and we snacked and cooked. I don’t want to pat myself on the back but I will… my turkey came out AWESOME!

This is the sixth time I’ve hosted Thanksgiving and I think I finally have it down pat. Thankfully my mom and mother-in-law help clean up after me as I go because I am a MESSY cook.

I did add a new side dish this year AND my very own cranberry sauce!

Anyway, I’m sneaking a moment after dessert, movie watching and game time to announce the winners of Judy’s 4 Paws for Ability fundraising Turkey Trot campaign. Everyone who donated $50 or more was automatically entered. Note: I used random number generator to pick the winners.

Lunch Time is a new feature here at Iateapie.net, where I'll share how I incorporate some of the products I review into a fulfilling lunch without too many calories.

This week's lunch time eats - Turkey & Cheese Sandwich + Red Rings Salad.

The turkey is Boar's Head brand, from the deli, along with the cheese which is regular American - my husband picked this up and he is not one for "fancy" cheeses. I added lettuce and cucumbers as my veggies of choice, and for the condiment - boring ketchup, but that's how I roll.

The "Red Rings Salad" has leafy green lettuce, rings of a red bell pepper, cucumber slices, dried cranberries, almonds sliced (bought in bulk) and a generous dash of McCormick Salad Toppins. The salad dressing I used is Wish-Bone Italian Dressing.

Greedy Recipe! Tender, Juicy Turkey Burgers

A bun. The burger. With some ketchup slapped inside.

Turkey burgers aren’t exactly revolutionary. Mine may not look real fancy, but when this burger connects with your chewing-jaws, you’ll be like “knick-knack, paddy-whack, gimme more of dat!”

If you want a turkey burger that’s full of flavor and a tender, juicy sensation, then mix these ingredients into your ground turkey and cook it up like so…

TENDER, JUICY TURKEY BURGERS

Serves up to 7 greedy peoples

Ingredients

2 lbs ground turkey1/4 cup Italian seasoned panko bread crumbs1/4 cup minced onion flakes1 tbsp parsley flakes1 tbsp olive oilsprinklings of garlic powder, seasoned salt, black pepper, and salt (don’t be heavy-handed)

Directions

Add all ingredients to bowl (except for olive oil) and mix thoroughly. Be sure to crumble parsley flakes with your hands as you add it to the bowl.Heat pan to medium-high and add olive oil.While the oil heats, form burger into patties.Add patties to the pan with a few light splashes of water, then partially cover with lid to encourage steaminess.As water evaporates in the pan, add additional splashes to keep patties from sticking AND to encourage more steam. Keep pan partially covered. The steaming action and partially covered pan is the key to tender juiciness.Cook approximately 15 minutes total, flipping once during cooking. Patties are done when juices run clear.

This is a healthy meal that even your family will wanna sink their teefs into. It’s quick to make and pretty inexpensive. My side dish in the background is baked eggplant fries (Food Trap Alert coming soon for the tasty deets on those fries).

Weight Watchers Smart Ones Morning Express French Toast with Turkey Sausage Review

Weight Watchers French Toast with Turkey Sausage

You've got mail! And in the package was Weight Watchers Smart Ones Morning Express French Toast with Turkey Sausage. I thought this was an ambitious undertaking as a frozen, microwaveable food product, so I was really curious as to how this would turn out.

Serving Size: 126 grams (1 pkg)
Calories: 280
Total Fat: 8 grams, 12%
Saturated Fat: 2.5 grams, 11%
Sodium: 570 mg, 24%
Carbohydrates: 38 grams
Fiber: 2 grams, 8%
Sugar: 18 grams
Protein: 14 grams

Inside the box are 2 french toast slices, 4 small sausage ... bits, and a packet of syrup. I followed the directions to microwave, and the result was a pretty decent tasting breakfast meal. The french toast was slightly sweet on it's own, and of course, with the added syrup, the sweetness factor explodes. And the turkey sausage was like what a slightly smoky, salty turkey sausage should taste like. If you've ever looked at the astronomical fat content of sausages, you'll understand why there was not more included in this meal. The question I asked myself is, would I rather purchase this product for $3.09, or make my own french toast? More on that later ...

The contents of each package of Weight Watchers Smart Ones Morning Express French Toast with Turkey Sausage provides 280 calories, 8 grams of total fat which includes 2.5 grams of saturated fat (12% and 11% of the daily value), 570 mg of sodium (24% of the DV), 2 grams of fiber, 18 grams of sugars and 14 grams of protein. The ingredients list is quite the lengthy diatribe you would expect it to be since this is not an all natural product, and this is 7 Weight Watchers Points.

This product retails for $3,09, so, back to the question, would I buy this instead of making it myself, especially since it's so easy to make? For me, french toast & sausage is an indulgent breakfast, and Weight Watchers Smart Ones did a good job of providing a portion that wasn't too high in calories and fat, but this is not something I would really be eating if I were following a "Weight Watchers" plan, or trying to lose weight. If I were indulging as a weekend breakfast for example, then I would prefer to make it myself. But as I said, WW did a good job on the taste.

(now take a moment & please to check out Cindy’s abs in the link above. We can wait.  holy crapballs. I know. I’m thinking if this recipe gits us her abs of washboard-steel this misfit may actually cook.)

Cindy’s Thanksgiving Leftover Casserole

5 c. mashed potatoes
3 c. leftover stuffing
2 c. turkey light meat, skinless, cooked and cubed
10-¾ oz. Low-fat cream of mushroom soup
1 ¼ c. water

Preheat oven to 350’. Prepare a 2-quart casserole dish with cooking spray. Spread potatoes into bottom of prepared pan. Top with stuffing. In a mixing bowl, combine turkey, soup, and water. Mix well. Pour over stuffing. Bake, covered for 20 minutes or until heated through.

Serving size: 1 cup
Calories: 336
Fat: 5g
