Turkey & Cheese Sandwich + Red Rings Salad

Lunch Time is a new feature here at Iateapie.net, where I'll share how I incorporate some of the products I review into a fulfilling lunch without too many calories.

This week's lunch time eats - Turkey & Cheese Sandwich + Red Rings Salad.

The turkey is Boar's Head brand, from the deli, along with the cheese which is regular American - my husband picked this up and he is not one for "fancy" cheeses. I added lettuce and cucumbers as my veggies of choice, and for the condiment - boring ketchup, but that's how I roll.

The "Red Rings Salad" has leafy green lettuce, rings of a red bell pepper, cucumber slices, dried cranberries, almonds sliced (bought in bulk) and a generous dash of McCormick Salad Toppins. The salad dressing I used is Wish-Bone Italian Dressing.

Lunch Time - Apple Berry Salad + Pasta With Sausage

Finally allergies seem to have had it's way with me and is now releasing me from the death embrace. I LOVE spring and warm weather, but the coughing, sneezing etc I can do without!

Lunch time eats: Left-overs - a bit of poor planning saw me with 2 starving kids home after their 2-hour swim practice around 7:30 PM with nothing to eat. Well, trusty macaroni + pasta sauce + some left-over sausages = delicious dinner (or so they said) and some pretty decent left-overs. I could eat sausage for DAYS, so I made a salad to help curb the cravings, which is why I eat a salad almost every day.

Apple, Berries and Feta Salad - Green leaf lettuce (my favorite kind) + apple slices + fresh strawberries + dried cranberries + Athenos Low-fat Feta Cheese. Delicious - I missed cheese in my salads! The salad dressing is still Wish-Bone Italian, which is just about finished now ... time to try something new.

Hiding in the background is an Odwalla Chocolate Peanut Butter Protein Bar, which I saved for a snack later on during the day. I'm reviewing nutrition/ snack bars in the next few days, so I grabbed a bunch from the store to try.

This week's lunch time eats - Apple, Avocado & Almonds Salad. There's actually some cucumber slices in there too, but it's hidden, and again (like last week's Red Rings Salad), I used McCormick Salad Toppins.

Lunch is on me…

Oh People, IT’S HOT

(newsflash I know)

Im OVER the cooking.

Ive places to go.

The pool it does call me.

The park (in the morn!!).

To spend all day cooking

I’d be quite forlorn.

This salad is fast.

Pretty healthy and GOOD.

& I feel like Im “cooking”

as all mamas should*

Green onions picked out.

More chicken it needs.

That said, with those tweaks,

as a MEAL it succeeds!!

In The Bag: The 3 Back-to-School Lunch No-Nos

Everyone wants the best for their children. That goes without saying. And while we all also know there are worse things you can do to your kids than sending them off to school with Lunchables, there aren't many. So we get up early and pack what we hope is a healthy lunch. Parents find it comforting that they’re sending their precious cargo off to school with home-packed meals, but there can be some hidden evil in that lunch.

Here are three of the biggest mistakes we make when feeding our kids during the school year, and ways we can prevent them.

1. No Skipping
One of the biggest mistakes that we make (or our children make) starts before school. Skipping breakfast. This is a no-no for sure. Not eating breakfast reduces learning and decreases ability to focus and pay attention. In addition, it can be a contributor to obesity. When you skip breakfast, you may get overly hungry later and this can lead to poor food choices, eating too much and eating too fast.

So, give your kids a healthy breakfast each morning (and take this as an opportunity for you to have one -- because you need it, too). Start the day off well with oatmeal, a piece of whole-wheat toast with peanut butter, scrambled eggs or egg whites. Even a healthy, protein filled smoothie works great for fueling the day.

2. Lukewarm Lunches?
Unsafe home-packed lunches can be a major problem. Bacteria are evil little buggers, and when our cold food isn’t kept cold enough and our hot food not kept hot enough, they have a perfect environment in which to multiply. Perhaps that stomachache or intestinal upset little Johnny came home with wasn’t a bug he caught from a classmate; it may have been his lunch! Hot foods need to be kept at or above 140 degrees, and cold foods should be kept at or below 40 degrees.

A recent study from the University of Texas in Austin, which was published in the Journal of Pediatrics, found that over 90% of pre-schoolers’ home packed lunches were not at a safe temperature for eating once lunchtime arrived. Be sure to pack several ice packs in your child’s lunch box, and use insulated lunch boxes to maximize staying temperatures. Freeze liquids (and even yogurt) the night before, then in the morning place them in the lunch box.  Avoid using lunch foods that spoil easily, such as egg salad and things mixed with mayonnaise. There are even lunch boxes that can be placed directly into the freezer the night before use.

3. Attack of the Snack Attacks
Careful with the after school snacks! Now, don’t get me wrong, snacks are good for us, and I encourage several small snacks throughout the day. The problem isn’t the snacks; it’s what a child may choose for a snack (especially if mom or dad isn’t around).

Many people store convenient snack packages in their pantry or cupboards, such as chips, cookies and the like. If they’re around, guaranteed the kids will snack on them. Instead, choose to have fresh and healthy snacks easily available. Good examples are, dried fruit, fresh fruit, trail mix, low-fat cheese and whole grain crackers, yogurt, cut up veggies, and hummus. Also, many kids will drink their calorie allotment for the day with out realizing it, so don’t have sodas, punch and other high calorie drinks around.

Nighttime Running, Little Guys Lunch and Today’s Food Journal

I decided to do things a little differently today. Instead of starting my day with a run–something that was pretty easy to do with just the 5 year old but not so much with an infant–I headed out at 9 PM after both kids were in bed.

It was EXACTLY what I needed to do!

I feel FAN-FREAKIN-TASTIC! Even with a beet red face and sweat dripping from my brow, I have a smile ear to ear.

This was exactly what I needed to start my snack-less nights challenge. I don’t even feel like eating now. It’s weird.

Let’s see, in other news…

He has sugar snap peas, sweet cherries, whole grain ritz with The Laughing Cow cheese and turkey pepperoni, leftover roasted potatoes and 2 chocolate chip cookies. It’s one of his bigger lunches because he requested the potatoes. We’ll see if they actually get eaten.

If there is enough interest I’ll start this up in the fall since there are only 2 weeks of school left. Let me know what you think.

Ok, that’s all I have in me today besides my food journal. It’s now 11:30 and I STILL have no desire to munch! YAY for nighttime running!

All bran, with frozen wild blueberries ans choc almond milkAn old favorite breakfast of mine. Hungry and wanting something substantial to hold me over until lunch. I was hungry bit it wasn’t quite lunch time yetbrown rice california roll, spring roll, miso soupOut to lunch. GUESS who’s idea that was. ALL cooked on the grill again. I’m obsessed. Sugar free Rita’s and a few bites of the little guys..family outing for ice cream on a hot day.
