10 Nighttime Snack Ideas

I had this genius idea while at BlogHer last week to start a series of posts on Tuesdays for Top 10 lists. 

I like the idea of having a loose editorial calendar for the blog. It gives me a little creative constraint even though I don’t always keep my own schedule.

Tonight my focus is on snacks. I’m fighting my typical mindless evening snack cravings at this very moment.  I have a bag of Doritos, a box of Triscuits, and The Husband’s Ben & Jerry’s calling my name, all of which I can blow through without even blinking

So instead of eating, I’m writing. In my 8 years of maintaining I’ve learned the art of distraction. I’ve also learned you can’t always fight yourself when you have cravings. Sometimes you have to work with them. I’m always going to be an evening snacker. It’s just how I’m wired and frankly, I enjoy unwinding with a little treat at the end of the day once the kids are in bed I just have to be smart about it.

Here are my Top 10 Evening Snack Ideas for those times you just was something. 

10. Hot Tea and a VitaCake

I’m not listing Vitalicious just because I work with them, I swear! I really like this product. The VitaCakes are 50 calories, whole grain, and high fiber. They are the perfect small bite when you just want something sweet, and the Fudgy Chocolate goes great with a hot cup of peppermint tea. 9. Strawberries and Chocolate

I haven’t done this in a while but when I was losing, I was obsessed! Wash some fresh strawberries, crack open a single serving of sugar-free chocolate pudding and dip away! It’s sinfully indulgent but super light and lasts a long time. I’d eat any remaining pudding by licking it off my fingers ’cause that’s how I roll.

8. Frozen Grapes

A summer favorite! If you haven’t tried it yet you must! Anytime I buy grapes we eat some fresh and then I pop them in the freezer before they go bad. My 8-year-old loves them too!

7. Bell Pepper Nachos

I came up with this idea a few weeks ago when I was seriously craving something cheesy. Click here to see my original posting. I added avocado but it’s totally optional. Next time I’m thinking a jalapeƱo slice each!

6. FRIES!

Another life saver when I was losing. I’d keep fresh butternut squash on hand and bake fresh batches of butternut squash fries when my appetite was insatiable. Let me tell you from experience, eating a whole butternut squash will fill you up! 

5. PIZZA!

Notice I got all excited about pizza and fries. These 2 things are definitely a weakness for me but instead of avoiding I embrace and use them as inspiration. I have a whole category devoted to pizza on GreenLiteBites and I’ve been known to fire up the oven at 10 p.m. to whip up a pizza-inspired creation. Hey, it’s better then picking up the phone and calling Dominos!

4. Cheese and “Crackers”

Another thing I’ve learned to make my own. “Old Roni” could do some major damage to a block of cheese, a box of Wheat Thins and a stick of pepperoni while watching TV.  Now when the cheese and cracker cravings set in I grab a cucumber, 1-2 wedges of The Laughing Cow and dried cranberries. Full disclosure: I work with The Laughing Cow too but that has no bearing on how much I love their products! All opinions are always my own.

3. Homemade Yogurt Creations

If you were following me on Instagram a few months ago you may have followed along with #DailyYogurt where I shared a new creation every day. I don’t eat yogurt quite as much but I do enjoy it every couple of days as my evening snack. Click here to see a collection of some of my favorites.

2. Banana Soft-Serve

I refuse to keep ice cream in stock (The Husband is the one going through Ben & Jerry’s obsession recently), it’s just too tempting. Instead I make sure to have a few frozen ripe bananas that I can easily turn into “ice cream” whenever I want. I normally just use my Magic Bullet but I also have the banana soft serve machine for larger batches when the kids want some as well.

1. Popcorn

Popcorn has always been my night-time go to for the pure fact that you get a lot of bulk for minimum calories. I used to keep bags of microwave popcorn in stock but I have since moved on to a really cheap air-popper. Now I pop a big bowl,  spray with a little non-stick cooking spray (weird I know, hear me out) and sprinkle with salt. The cooking spray gives you just enough oil to help the salt stick without the need for melted butter. I’ve also been known to sprinkle Old Bay, cinnamon or cocoa powder on it as well. If I go with a sweet version, just the tiniest amount of powdered sugar works wonders!

20 Fun Yogurt Topping Ideas

There were a few weeks where I’d throw up a #DailyYogurt idea a day, but I’ve been slacking lately.  Honestly, I ran out of yogurt and my pantry stock was hit hard after two weekends away. I’ll still share ideas as they come on Instagram, but I wanted to grab a few of my favorites and archive them here. Below each photo is my original Instagram comment.

The husband bought me peppermint patties for V-day. I couldn’t help myself. 1 pattie + mini chocolate chips + a drizzle of syrup

This #dailyYogurt is a nod to my frugal side. It’s topped with the crumbs I save from the bottoms of the strawberry shredded wheat boxes and freeze dried strawberry bag. No extra sweetener needed. It’s delicious!

Today’s #dailyYogurt is topped with a fresh mandarin orange, 1 chopped date, a chopped walnut and a touch of nutmeg. It’s amazing!

Today’s #dailyYogurt is topped with frozen berries I warmed in the microwave. Then, just because I could, I grated a small square of dark chocolate on top. :)

Today’s #dailyYogurt is inspired by the carrot cake @vitamuffin top. I double toasted one and cut it into cubes to top the yogurt then added some grated carrot, a chopped walnut half and a bit of honey. It’s totally decadent!

1/4 cup frozen raspberries + 1/4 tsp raspberry extract + 1 tbsp cocoa powder + 1/2 tbsp honey = a much needed, delicious break from work. #dailyYogurt :)

1/2 cup frozen blueberries pureed with 1/2 cup nonfat Greek yogurt and 1 tbsp unsweetened cocoa then topped with more frozen blueberries. #dailyYogurt

I’ll say this until my dying day: Food you prepare is ultimately more satisfying then something you just grab on the run. Take a minute the next time you want a snack and have fun with it. Make food your friend instead of something you’re constantly fighting. That’s what GreenLiteBites is all about for me.

14 Yogurt Topping Ideas to Inspire Your Next Snack!

2 weeks ago I started a fun hashtag on Instagram called #DailyYogurt. It’s my way to get creative with snacking while (hopefully) inspiring you to think outside the typical yogurt box.

As I said in my post, Tubs of Greek Yogurt and Bags of Kale Don’t Lie, my journey to eating plain greek yogurt instead of artificially sweetened pre-made cups was a long one, but now, I’m hooked!

I love using creamy yogurt as basis for fun flavor combinations. It gets me eating other healthy things like fruits, nuts and seeds, and really, you can never get bored! I’m NOT saying I’ll never eat another flavored yogurt cup again, but when I’m home and have my pantry at my disposal, I’m a topped plain greek yogurt girl all the way!

Here are 14 of my latest creations starting with a special one for today, Valentine’s Day. :)

A swirl of low sugar strawberry preserves, banana, mini chocolate chips and a small drizzle of chocolate syrup.

My version of honey nut cheerios: cheerios, cinnamon almonds, and honey

Topped with pistachios, dried cranberries and honey.

Topped with ground flax, walnuts, maple syrup, and cinnamon.

As you can see, the possibilities are endless! I’m seriously thinking of starting dailyYogurt.com just for fun. Then I remember how many blogs I have. Doh! Maybe, just maybe someone will sponsor me to do it. *wink* *wink*

You can also see how much of each ingredient I use if you follow me on MyFitnessPal. Most fall in the 130-200 calories range. Yes, even the chocolate ones! It’s actually pretty easy to do. 1/4 oz of nuts adds just the right crunch when chopped up and drizzling 1/2 tbsp or less of honey ads just the right sweetness.

10 Light Holiday Cookie Ideas from GreenLiteBites

Christmas is coming and in my house that means baking season is upon us!

One of my absolute favorite things to do is making cookies with the kids. It was one of my fondest memories as a kid.

Yup that’s me! Sick that Christmas that’s why I didn’t look too happy (accoring to mom,) but I remember loving every moment of it every year. It was something I couldn’t wait to do with my own kids.

Over the last few years I’ve experimented with a few cookie ideas that I can have fun making and feel good about eating and feeding my kids.

There’s nothing wrong with traditional cookie recipes, but making things just a little lighter and healthier is fun challenge for me. Why not try to minimize calories and maximize nutrition while indulging in holiday traditions?

I just don’t see the harm in it. If they don’t turn out than you could always fall back on the classics. I mean how many sugar cookies recipes exist anyway?

Hot Body Home Workout #1 and Post-Workout Breakfast Ideas

Hey guys, here’s the first of many Hot Body Home Workouts to come! If you can’t get to the gym or if home workouts are simply your thang, it’s time to get up off your booty and get it moving.

After a thorough warm-up: Select your circuit level (Level 1, 2 or 3), consisting of basic moves that only get tougher depending on which level you choose. Then move onto the optional “Hotter Body Challenge” to top off your workout on an extra sweaty, fat burning note.

LEVEL 1 equipment needed: optional exercise mat or carpeted area

3-5 knee push-ups (on mat or carpeting)8 squats (feet slight wider than shoulder-width)8 alternating reverse lunges

Complete this beginner’s circuit 2-3 times.

Level 1 Hotter Body Challenge (optional): After finishing your circuits, set your interval timer for 5 rounds of 45/15. Each 1-minute round  = 45 seconds brisk march in place + 15 seconds slow march in place.

LEVEL 2 equipment needed: one 8-10#dumbbell, optional exercise mat or carpeted area

5 full body push-ups + 5 knee push-ups12 squat jumps10 alternating reverse lunges, holding one 8-10# dumbbell in both hands close to your chest.

Complete this intermediate circuit 3-4 times.

Level 2 Hotter Body Challenge (optional): After finishing your circuits, set your interval timer for 5 rounds of 45/15. Each 1-minute round = 45 seconds “invisible” rope skipping + 15 seconds brisk march in place.

LEVEL 3 equipment needed: one 8-10#dumbbell, optional exercise mat or carpeted area

10 full body push-ups15 squat jumps16 alternating  reverse lunges, holding one 8-10# dumbbell or medicine ball overhead. Keep that core tight!

Complete this advanced circuit 4 times.

Level 3 Hotter Body Challenge (optional): After finishing your circuits, set your interval timer for 5 rounds of 45/15. Each 1-minute round = 45 seconds brisk high knee jog + 15 seconds march in place. Get those knees up!
