We’re home after an amazing week at the beach!
My goal today was simply to finish the laundry, clean up the house and get in a run.
It all started with breakfast. I made Banana Almond Oat Pancakes for the boys.
Do I have the only toddler who likes to eat flour? He asks for it every time and actually eats it!
Anyway, I wanted eggs so I pulled out the bag of spinach I froze before leaving for the beach — this is my trick so it won’t go bad –
and made a Spinach Egg Roll Up with bacon bits.
It may not have come out pretty but it was super yummy!
After breakfast it was laundry folding time.
The house really was a disaster.
It was like we dropped a bomb while packing and just left everything where it laid. Like we weren’t going to have to come home and clean it.
Yeah.
We broke for lunch. I made a quick ham wrap topped with the cole slaw I made yesterday and it was delicious!
After lunch The 2-year old went down for nap and the 8-year old called his friend while I got some work done. Then I took a break next to the sleeping husband.
Our break didn’t last long.
We decided to take the kids to the mall just to get out of the house for a bit.
I was planning on grilling dinner when we got home but a freak thunderstorm rolled in and we decided to eat at Red Robin while we were there. I had a Banzai Burger on a lettuce bun with a side of sweet potato fries.
After we got home and put the kids to bed, I headed out for my run at sunset.
I’m on day 8 of my new run streak. I like seeing how long I can keep up the minimum of a mile-a-day habit. It’s fun!
Other than that, I posted a few beach tips on TheUnworldlyTravelers and yesterday I shared my new Cole Slaw recipe on GreenLiteBites. It always makes me happy to have all the blogs updated. I know, I’m a dork.
This week is going to be a bit crazy as I leave for Chicago on Wednesday to speak at BlogHer. I wasn’t planning on going but they asked me to be a part of the Fad to Foundation panel on Healthminder Day and it sounded like a lot of fun.
