These are some healthy recipes I bookmarked recently to make for this week's meal plan. This week is a bit of a mish-mash of things - being close to the end of a semester always leaves me frantically busy and my head just gets cloudy with all the things to do for and with the students.
Meatless Monday
Lunch: Fresh Corn & Cherry Salad with Sweet Cucumber Vinaigrette ... cherries were on sale - yes!
Dinner: Ravioli Pasta Salad ... going to try Buitoni Light Four Cheese Ravioli, so hope it's good.
