Weekly Healthy Meal and Menu Ideas

These are some recipes I bookmarked recently to make for this upcoming week's meals. This week, it's heavy on the vegetables, eating a salad with dinner almost every day.

Meatless Monday. I love meat as much as the next person, but it doesn't have to be an everyday thing. At least once a week, it's nice to get creative with non-meat dishes.
Lunch: Muir Glen Organic Southwest Black Bean Soup + sliced carrots and bell peppers dipped in Sabra Supremely Spicy Hummus.
Dinner: Quinoa and Pomegranate Salad

Pomegranate + Quinoa Salad

Tuesday. Keeping it simple today.
Lunch: Left-over Quinoa and Pomegranate salad + a simple sandwich of Foster Farms Turkey Pastrami on Vermont Bread Company Sprouted Wheat Bread, with lettuce, tomatoes and using more Sabra Supremely Spicy Hummus as the spread - love this stuff!
Dinner: Carne Bistec - Colombian Steak with Onions and Tomatoes + a side of Braised cabbage with apples & cumin seeds
