Delicious Dairy-Free Cream of Mushroom Soup

You do not have to hijack a cow’s udder parts to make this tasty soup. No dairy required. Prep time is only 10 minutes. Cooking time is sensible, too. You can do this. I promise.

I made my Dairy Free Cream of Mushroom Soup AFTER making dinner.

“But Josie, ain’t nobody got time for makin’ soup from scratch. I’ll just open up me up a can of Campbell’s and keep on rollin’.”

GAH! Please don’t talk like that. This recipe is so darn quick & easy; didn’t interfere with my couch-azzing time at all. You’ll be in & out of the kitchen in plenty of time to maximize (and in no way jeopardize) your much needed lazy time. M’kay?

INGREDIENTS (makes about 4-5 servings)

Prep time: Approximately 10 minutes.

6 cups chicken or veggie broth (equal to three 14.5 ounce cans)1 can Goya coconut milk (15.5 ounce can)1 fresh package mushrooms (white, bella, or both — take your pick)2 large carrots, chopped3 celery ribs, sliced1 large onion, diced4-5 garlic cloves, sliced (not smashed)sprinklings of thyme, pepper, sea salt, garlic powder and onion powder1.5 teaspoons rosemary3 heaping tablespoons flour1 tablespoon olive oil1/4 to 1/2 cup white cooking wine

If you have reservations about using coconut milk, don’t worry. The union of delicious seasonings make the coconut barely noticeable, if at all.

DIRECTIONS

Cooking time: 20-25 minutes.

Set mushrooms to the side and slice carrots, celery, onion & garlic.dairy free mushroom soup Delicious Dairy Free Cream of Mushroom Soup Add sliced veggies to large pot. Saute’ in olive oil & white wine until slightly soft.Add broth and coconut milk. Bring to a boil.Break up mushrooms into large pieces with your hands (or chop into thick pieces), then add to the pot. Feel free to add the stems to the pot if desired.Add sprinklings of thyme, pepper, sea salt, garlic powder and onion powder to the pot. As the soup cooks, add more seasonings to taste.Add the Rosemary. Try not to leave out this ingredient. It really brings out the flavor, along with the thyme.Continue to cook your brew on low to medium heat until all veggies are tender.To thicken your soup, add flour to the pot and whisk with a fork. Continue cooking until soup thickens. Add extra flour if you prefer your soup even thicker.

Any kind of homemade soup is best when packed up to sit in the fridge overnight. All those flavors get to marinate even longer. But you can bet your hungry stomach’s lust for tastiness that this soup is wonderful and warming to the soul when you scoop yourself some fresh out the pot.

This thing is pretty awesome. On my recent visit to the Dole test kitchen, I came away uber-impressed with the Yonanas phenomenon.

But what is it, exactly? Yonanas is ice cream makin’ with your favorite fruits. There’s no dairy involved and no sugar required. Just take your favorite fruit, give it a quick freeze for about an hour, then throw it into your Yonana for a healthy frozen dessert that has the consistency of soft serve ice cream.

I first got turned on to Weight Watchers Giant Ice Cream Bars when I reviewed the Giant Chocolate Cookies and Cream Bar. It's been a few years since then, but I recently came across Weight Watchers Giant Wildberry Sorbet & Ice Cream Bar. It's described as having, "luscious sorbet swirls ... a sweet and creamy treat that's sure to satisfy."

Calories: 120
Total Fat: 0.5 grams, 1%
Saturated Fat: 0%
Sodium: 45 mg, 2%
Carbohydrates: 28 grams
Fiber: 4 grams, 15%

This bar is just as good as the Cookies and Cream. It's a giant size frozen treat, which will take you quite a few minutes to get through - I suggest keeping handy a plate so you can put it down intermittently. The taste is just dreamy, creamy with a hint of tangy and sweet sorbet.

Each 102 gram Weight Watchers Giant Wildberry Sorbet & Ice Cream Bar provides 120 calories, 0.5 grams of total fat (1% of the daily value), no saturated fat, 4 grams of fiber (15% of the DV), 20 grams of sugars and 2 grams of protein.

The ingredients list starts is a little convoluted, and 20 grams of sugars is quite a bit for a snack, so save this for when you sweet tooth is making an appearance, and substitute it for other, more damaging treats. I bought a box with 6 bars cost $5.29 at my local grocery store, and it's a purchase I don't regret. I would buy this again - it is one of my favorite frozen novelties, because it's filling and 1 is enough to satisfy me.

I'm someone who can tolerate the fat-free versions of otherwise infamously fattening foods. Some folks can't stand the idea of substitutes that cut out the signature flavor, and they typically steer clear of such products either out of passion or depression. But as far as I'm concerned, you can sacrifice full flavor and still enjoy the added ingredient so long as you know how to infuse some of your own less-fattening flavors into healthy recipes. With that said, there always needs to be a base of edibility to begin with.

Kraft Fat-Free Philadelphia Cream Cheese has its work cut out for it. The rich, velvety, and unforgivably fattening flavor of regular cream cheese isn't easy to replicate sans the necessary ingredients. At 30 calories per serving, the fat-free alternative is 50 calories less per serving than its full flavor counterpart, which is an exceptionally large amount of taste ground to cover for cream cheese. Simply put, Philadelphia's fat-free option fails to break out of the starting gate.

Applied to a bagel, the taste is somewhere between plain yogurt and powdered milk. What begins as the familiar sensation of a warm buttery spread soon turns into a mashing of wheat bread and thickened skim milk which as you can imagine is humbling to say the least. This is complicated by the fact that, due to the thinner agents in the mix, this fat-free alternative starts to liquidate when applied to a freshly toasted bagel, which results in dribbles of the stuff leaking down out of the crack of your mouth while you chew.

But alas, this is the result of simply using the cream cheese for its most basic purpose. With little to distract the tongue away from its blandness, Philadelphia Fat Free Cream Cheese fails to perform at the simple tasks. BUT thrown into a health conscious crab mix modified from the directions found in your mom's recipe box, or whipped into a cheese cake with a liberal amount of fresh fruit topping, then its benefits start to shine through. When the cream cheese component is there mainly for texture with other ingredients dominating your tongue's sensations, the fat-free option comes in quite handy.

An 8 ounce tub costs $2.50 at my local grocery store. I would buy it again to use in recipes, but I didn't enjoy it eaten on it's own.

Skinny Cow Ice Cream Cups are one of my favorite desert treats. I've already tried (and raved about) a few of the flavors, including the Strawberry Cheesecake and Cookies 'n Cream so I decided to try something different, and opted for the Skinny Cow Dulce du Leche Ice Cream Cup ... I'm a sucker for caramel (it's the sweet and salty together).

I opened my cup and took a spoonful. Well, I tried, but I found that it was still too frozen. Before you misinterpret what I'm saying, let me say this - that's a GOOD thing. So many "light" ice creams are just pumped with air and therefore melt right away. Not the case with this one! As for the flavor, it was just delightful. It was the perfect blend of sweet and salty, and these ice cream cups do NOT taste light at all.

Each container (99 grams) of Skinny Cow Dulce du Leche Ice Cream Cups provides 150 calories, 1 gram of total fat, 4 grams of fiber (16% of the daily value), 22 grams of sugars and 4 grams of protein.

The ingredients list includes skim milk, sugar, and caramel swirl (corn syrup, sugar, water, sweetened condensed skim milk [condensed skim milk, sugar], modified corn starch, salt, soy lecithin, xanthan gum, caramel color).

A container of Skinny Cow Dulce du Leche Ice Cream Cup costs $2.00 at my local convenience store, and I like buying this as opposed to a gallon container of ice cream - I need portion control with ice cream. I really liked this flavor and will definitely be getting more in the future.

Skinny Cow Sundae Ice Cream Cups come in a single portion container and thank goodness for that, because the Strawberry Cheesecake and Cookies 'n Cream varieties taste so good that I know I wouldn't be able to control myself if there was more around! Recently, I spotted the Caramel Cone flavor and decided to give it a try for Dessert Friday!

Inside the container, I found a vanilla ice cream base swirled with crunchy bits and caramel. I dug my spoon in and took a bite. Mmm yummy! I loved the sweet + salty combination - the caramel was simply a divine addition. This was another home-run Skinny Cow Ice Cream Cup flavor - and although I mentioned before that these are so good you would eat more if you had it, let me assure you though that the amount in each cup (99 grams) is really adequate, and not too skimpy.

Each container provides 170 calories, 3 grams of total fat, 2.5 grams of which is saturated (13% of the daily value), 4 grams of fiber (16% of the DV), 24 grams of sugars, 4 grams of protein, and 20% of the DV for calcium.

The ingredients list (see it at Wegmans), is a little lengthy, and you can definitely see why there is 24 grams of sugars.

I picked one up at the convenience store for $2.00 (pretty sure I could have gotten it for $1.50 elsewhere though), and while this caramel cone flavor is yummy, I would probably buy the Cookies 'n Cream one instead - it's just as tasty but has 6 grams less sugars.

5 Ways to Rescue Your New Year’s Resolution (The Weight Watchers Ice Cream Video!)

In it I talk talk about 5 tips to help you keep your new years resolutions but I actually pulled together 10 that I think are key…

Forget “Perfect” Everyone is looking forward to the New Year. It’s a new chance. An opportunity to be perfect. There is only one problem – perfection is hard and, not to mention, nearly impossible. So once we come to the realization that we aren’t perfect, our New Year’s resolutions get thrown out the window. To be successful, set realistic and specific goals. Resolve to make small changes. Have one healthy meal a day or always take the stairs. Get Creative Getting creative in the kitchen can save you calories and money. When you are trying to make a change, it’s important to fight cravings in unusual ways. For example, if you crave fries, make them with butter squash; if you crave pizza, use a whole grain tortilla instead of dough. Chips and dip more your thing? Slice up some veggies and dip them in hummus. The goal isn’t to stop snacking – the goal is to get creative with your snacks. Rearrange Your Refrigerator How many times have you bought fresh groceries only to have them rot in your refrigerator drawers? It’s probably time to rearrange the fridge! Put all the fresh, healthy stuff at eye level. Make it the first thing you see when you open the door. This way you are more apt to grab that apple or bag of carrot sticks when you are hunting for something to snack on. Be Prepared for Snack Attacks When cravings strike, be smart and choose snacks that combine portion-control and taste. In the video, Roni uses a Weight Watchers Strawberry Smoothie Bar as an example of this type of snack. Having the right snacks on hand makes it easier to curb cravings and stay on track! Try to get your family into more activities. Get people you love involved and if they aren’t game, attend a few workout classes and introduce yourself. Search for local groups online. Finding your tribe will help you not feel so alone while you make certain lifestyle changes.

Chocolite Protein Cookies N Cream BarAfter experiencing the delicious and nutritious sugar free Chocolite Protein Peanut Butter Bar, I decided to go through my stash and try another flavor. The Chocolite Protein Cookies N Cream Bar looked like just the thing to have after a long hard workout.

I opened the bar to taste it and found a nice milky chocolate flavor with a chewy texture, along with a caramel layer on the bottom that was delicious ... I wouldn't say that there was a cookies n cream flavor, but it was still tasty just the same.

Each 34 gram Chocolite Protein Cookies N Cream Bar is gluten- and sugar-free, and provides 95 calories, 3 grams of total fat, 2 grams of which is saturated, 9 grams of fiber, 4 grams of sugar alcohols plus 9 grams of protein and fiber (38% of the daily value). There is also a slew of vitamins and minerals (15-30% for each).

The ingredients list starts with a protein blend of non-GMO Soy Protein Isolate and Whey Protein Isolate. These bars are available online at Netrition, $16.99 for a box with 16 bars (+ shipping).

Considering that fiber and protein account for more than 75% of the calories, this is a pretty good snack, and it's tasty too. BUT if something is described as having a "cookies n cream" flavor, then my taste buds start expecting that - and this just doesn't deliver on that promise. So for that reason, I prefer the Chocolite Protein Peanut Butter Bar.

ICE CREAM! I love ice cream and you know what I’m not picky.. I call everything "ice cream" from frozen yogurt to Italian Ice. Sometimes I like creamy and sometimes I like refreshing but if it’s cold and soft it’s "ice cream" to me.

That’s why I was excited when Blue Bunny asked me to host a giveaway for American Diabetes Month. I get to try some more of their low sugar ice cream products again (I’ve reviewed their products before) plus give some away to you!

Creamy and dense is how’d I describe this product. Little man and I have been enjoying it a few nights a week. I top it with some frozen wild blueberries, light chocolate syrup and of course… sprinkles (his contribution.) It’s totally satisfying and cures that ice cream craving with only 6g of sugar for those that have to watch.

1 bar is 35 calories, 0g of fat, 2.5g of fiber, 2.5g of sugar, 0 WWP

OMG these are my favorite of the bunch! They are that perfect night time, I want something, snack and for only 35 calories each completely "guilt free." One lasts forever and the texture is fudgy and smooth.

1 bar is 100 calories, 7g of fat, 1g of fiber, 2g of sugar, 2 WWP

These are a classic ice cream bar with chocolate crisp coating. I’d rather a bowl of ice cream or the "free" fudge bar but these are a great low sugar snack when you want something cool and refreshing.

Creamy and dense is how’d I describe this product. Little man and I have been enjoying it a few nights a week. I top it with some frozen wild blueberries, light chocolate syrup and of course… sprinkles (his contribution.) It’s totally satisfying and cures that ice cream craving with only 6g of sugar for those that have to watch.

OMG these are my favorite of the bunch! They are that perfect night time, I want something, snack and for only 35 calories each completely "guilt free." One lasts forever and the texture is fudgy and smooth.

1 bar is 100 calories, 7g of fat, 1g of fiber, 2g of sugar, 2 WWP

These are a classic ice cream bar with chocolate crisp coating. I’d rather a bowl of ice cream or the "free" fudge bar but these are a great low sugar snack when you want something cool and refreshing.

ICE CREAM! I love ice cream and you know what I’m not picky.. I call everything "ice cream" from frozen yogurt to Italian Ice. Sometimes I like creamy and sometimes I like refreshing but if it’s cold and soft it’s "ice cream" to me.

That’s why I was excited when Blue Bunny asked me to host a giveaway for American Diabetes Month. I get to try some more of their low sugar ice cream products again (I’ve reviewed their products before) plus give some away to you!
