VitaCake ‘Recipe’ Contest Winners Announced!

I’m not sure where the time went, but it’s been more than a month since I hosted the Chocolate Raspberry Mini VitaCake ‘Recipe’ Contest!

A month!

Whew! Time is flying.

Anyway, I’m not going to hold up the announcement any further with my blabbering. Vitalicious LOVED everyone’s submissions and had a hard time picking a winner. In the end in came down to uniqueness and the pears took it home.

Winner: Paula’s “I Don’t Have a Name for This” Pear Yummy Goodness!

I don’t really have a name for it, but this is how I like to have it for dessert now and again, and I usually have these items on hand:

In a small pan I put a can of sliced pears (canned in pear juice) add about 1/2 the juice to the pan, add 2 tablespoons of raspberry low-sugar jelly or preserves or strawberry (if you don’t have raspberry). Add a teaspoon of cinnamon and simmer until the jelly/preserves have melted and the juice is slightly thicker. Heat 1 Chocolate Raspberry Mini VitaCake in a bowl in the microwave as directed on package. Pour 1/2 the pear mixture over the VitaCake and enjoy. Don’t forget to make one for your loved one for the other half of the pear yummy goodness!

According to Vitalicious, which calculated the nutritional information, Paula’s dessert is 97 calories, with 1 g fat, 25 g carbs, 6 g fiber, and 2 g protein.

 I’m really excited about finally entering one of your contests! This is one of my favorite ways to eat the chocolate vita-cakes but I think it will taste even better with the chocolate raspberry vita-cake. Here’s what I do: I take mandarin oranges without any added sugar and add them to a small bowl of raspberries. I do add some of the juice depending on how many raspberries I use. I eyeball this and use about equal amounts of oranges and raspberries. Then I take about a teaspoon of orange marmalade and spread that over the vita-cake. Then I take about 1-2 tablespoons of lite cool-whip and add a drop of rum extract. I mix this together until its fully incorporated. I take about 2 tablespoons of the orange and raspberry mixture and spoon it over the marmalade covered vita-cake and then top it off with the cool whip mixture. Sometimes if I have it in the house I’ll add a layer of the strawberry laughing cow cheese before I add the cool whip and then sprinkle some crushed graham cracker crumbs on top or a few more berries and oranges. It looks really pretty if it’s served in a small clear glass.

I eat 2-3 Vitatops daily — so yes, I am obsessed. This is my favorite way to eat it and would be awesome with the raspberry mini vitacake for a snack:

1 Raspberry VitaCake toasted

1/2 cup Fage Greek yogurt

2 teaspoons chia seeds

sweetener packet

2-3 teaspoons dark cocoa powder

Put all ingredients in a bowl except for VitaCake and mix well

Put toasted VitaCake on top and break up, mixing into yogurt

Voila! Amazing snack!!

Runner Up: Emily

 PB&J VitaCake style- Split lengthwise, spread 1 T PB and 1 T Raspberry all-fruit jam, stack sides back together. Yum!

The VitaCake Date Mate Contest: Win a 24 Pack for You and 3 Friends!

A few months ago Little Guy and I had a blast reviewing the new Vitalicious VitaCakes. Check us out…

As you can see, my favorite VitaCake pairing is Hot Cocoa. I love, love, LOVE a frozen VitaCake dipped in a hot cup of chocolate.

This gave me an idea. What if I hosted a VitaCake Date Mate contest where you share your favorite or most creative way to eat a VitaCake.

Never had a VitaCake? No fear! You just need to leave an idea to enter. How fun and creative can you get with a 50 calorie piece of chocolate cake? Maybe a little frozen yogurt on the side for an a la mode? What about cut in slices and made into a parfait with berries and whip cream? The possibilities are endless!

We are looking for the most creative idea while still being in the lighter/healthier realm. No smothering the VitaCake in butter and topping with decadent ganache. Think fruit, yogurts, granola, nuts, etc.

The most creative idea (as judged by Vitalicious) will be featured on the Vitalicious Facebook page and the winner will receive a 24 pack of VitaCakes and 3 additional packs for 3 of their friends. This contest is all about sharing the love. Share your VitaCake ideas and then share your prize with your friends! It’s a win-win-win-win-win!

Chocolate Honey Cakes! (My Toast Ambassador Contest Entry)

Why slave in the kitchen with mixing bowls, a hot oven, impatient baking times and a ton of dirty dishes when you can make “cake” in about 5 minutes from prep time to chewing time with minimal kitchen duty. This is a Toast-Off, baby!

The Inside Story Behind Chocolate Honey Cakes

I struggle in the kitchen. This is no secret, yet I have no shame in admitting my hungry shortcomings.

But wait!

Every once in a while when the pigs are outside flying, I hit a recipe home run that makes me want to back twist and belly flip from one end of the kitchen to the other (but please, people, do not try that at home).

Cake has always been a soft spot of my greedy-in-moderation joy. I happen to be the only person I know to participate in a one woman, cake-eating competition (eh-em, which I won, of course). And as for toast? Growing up, my nickname was “Bread”, so my intrigue with loaves and toasts smathered in buttery-tasting goodness is not some mythical folklore, okay?

Chocolate Honey Cakes is my tribute to the things that I love: Cake, toasty bread and buttery-tasting goodness. But there’s one other thing that I adore. It’s the reaction of my husband and our 4 child-spawns as their dessert-craving jaws chomp down on this delectable treat. Their faces become contorted with happy joy as they savor the feast and finally compliment me on my cooking.

Whew! I’m really lovin’ it.

CHOCOLATE HONEY CAKES: THE RECIPE

Utensils/Equipment Needed: Toaster, cutting board, butter knife, Chef’s knife (or substitute butter knife), measuring spoons, serving plate, and fork(s) – to help you feed your food trap this delectable creation.

INGREDIENTS (serving size: 2)

3 slices cinnamon-raisin bread (such as Pepperidge Farms)3 teaspoons honey1.5 teaspoons I Can’t Believe It’s Not Butter!® Whipped and Creamy1.5 tablespoons milk chocolate morsels3 pinches cocoa powder (1 pinch = approx. 1/8 teaspoon)

DIRECTIONS

Toast bread on medium setting (please do not use “crispy-charred” toaster setting).Stack toasted slices and cut off all 4 edges using Chef’s knife or butter knife.Spread 1/2 teaspoon of I Can’t Believe It’s Not Butter!® Whipped and Creamy onto each toasted slice. Whipped and Creamy is preferred because of its creamy, fluffy texture. It definitely enhances the complete dish.

*Now it’s time to “bake” your cake made of toasted, buttery-tastin’ bread slices (aka, the “cake layers”)

Transfer first “cake layer” to your serving plate.Sprinkle with 1 pinch of cocoa powder.Now drizzle on 1 tsp. honey.Add second cake layer and repeat process of 1 pinch cocoa powder and 1 tsp. honey.Add final cake layer. Repeat once more with 1 pinch cocoa powder and 1 tsp. honey.Finally, top with chocolate morsels.Cut into your finished cake with a fork and being to chew.

IMPORTANT NOTES

As you sprinkle the cocoa and drizzle the honey, be artistic about it – allow some of the cocoa and honey to be disbursed onto the plate itself to enhance your presentation AND for sopping the toasted bread around the plate once it’s on your fork. Mmmmm!It’s highly recommended that you build your cake layers immediately while the toast is still warm so the chocolate morsels will melt nicely on top.

What’s the saying? I’d forget my head if it wasn’t attached? That’s how I’ve been feeling lately. How did I do this while working full time? Seriously? Maybe it’s the holidays combined with the pregnancy, who knows. I’m not into making excusing for myself but seriously… I’m so scatterbrained anymore!

I was suppose to post the entries in my VitaTop Recipe contest LAST Wednesday. Better late the never I’d suppose but man I HATE missing deadlines.

CranBran VitaTop Stuffing by Arlene

1 teaspoon olive oil2 Tablespoons finely chopped onion1/2 cup diced zucchini1 Tablespoon Craisins2 small slices pumpernickel bread1 thawed CranBran VitaTop1/2 cup chicken broth

Preheat oven to 400 degrees F.

Heat oil in small skillet. Sautee onion and zucchini about 5 minutes, until soft. Add Craisins and cook another minute or so.

While the veggies cook, tear bread and muffin into bite-sized pieces. Turn off heat and add to skillet. Add chicken broth and stir until moistened.

Put into small baking dish and bake 20 minutes. (I think it might have benefitted from another 10 or so in the oven, but I was running out of time on my dinner break).

New England Breakfast Stacker by Kate

1 Golden Corn VitaTop1 tbsp real maple syrup (reserve half)1 tbsp bacon bits (such as Hormel Real Bacon Bits) (reserve a pinch)1 large eggcooking spray

Makes one serving (249 calories, 8.5g fat, 10g fiber) (5 ww)

1. Thaw Golden Corn VitaTop according to directions and toast to taste.

2. While the VitaTop toasts, spray skillet with cooking spray and heat over medium/high heat.

3. Beat together the egg and the bacon bits, reserving a pinch for garnish and pour into skillet. As the egg cooks fold it over on itself so it will fit on top of the VitaTop. Cook until the eggs are not runny.

4. When the VitaTop is done toasting, prick the top with a fork all over and drizzle 1/2 of the maple syrup over the top. Do this slowly so it can sink into the holes. Reserve the rest to pour on at the end.

5. Top the syrup soaked VitaTop with the egg. Drizzle the reserved syrup over the top and sprinkle with the reserved bacon bits.
Then enjoy! :) The whole process takes just 10-15 minutes and is simple enough to cook on a weekday morning. To reduce the calories and fat consider using two egg whites in place of the egg.

SLICE IN HALF. ADD A SCOOP OF FAT FREE COOL WHIP ON ONE HALF AND TOP IT WITH THE OTHER HALF OF THE VITATOP MUFFIN.

PLACE IN A ZIPLOC BAG AND PLACE IN THE FREEZER.

FREEZE AT LEAST 2 HOURS AND ENJOY.

YOU CAN MAKE A BATCH OF THEM SO THEY WILL BE READY FOR YOU TO ENJOY

WHEN YOU NEED THAT SPECIAL TREAT. ENJOY!

1 Tbsp.(14g) Neufchatel Cheese (this is a lighter type of cream cheese)1/2 Tbsp. (8g) Peanut Butter

Microwave for a few seconds (time will vary depending on microwave), to soften. Stir to combine and spread on warm Deep Chocolate VitaTop.

Nutrition Info: 83 Cal, 7g Fat, 0g Fiber 2WW Pts for Topping

I used regular peanut butter, substituting low fat is always an option. I could also see this being delicious with almond butter!

VitaTop french Toast By Gracie

To make this particular treat, I microwaved a frozen Golden Corn VitaTop for 25 seconds. Then I soaked it for a couple of minutes in a mixture of:

1 egg1 tbsp almond milk1/2 tsp vanilla extract1 tsp cinnamon

Cook the VitaTop for 2-3 minutes per side on a stovetop pan or griddle (medium heat). I topped it simply with butter.

Blue Bunny Ice Cream Giveaway and VitaTop Recipe Contest Update!

ICE CREAM! I love ice cream and you know what I’m not picky.. I call everything "ice cream" from frozen yogurt to Italian Ice. Sometimes I like creamy and sometimes I like refreshing but if it’s cold and soft it’s "ice cream" to me.

That’s why I was excited when Blue Bunny asked me to host a giveaway for American Diabetes Month. I get to try some more of their low sugar ice cream products again (I’ve reviewed their products before) plus give some away to you!

Here are the products I tried this time around…

1/2 cup is 110 calories, 5g of fat, 3g of fiber, 6g of sugar, 2 WWP

Creamy and dense is how’d I describe this product. Little man and I have been enjoying it a few nights a week. I top it with some frozen wild blueberries, light chocolate syrup and of course… sprinkles (his contribution.) It’s totally satisfying and cures that ice cream craving with only 6g of sugar for those that have to watch.

1 bar is 35 calories, 0g of fat, 2.5g of fiber, 2.5g of sugar, 0 WWP

OMG these are my favorite of the bunch! They are that perfect night time, I want something, snack and for only 35 calories each completely "guilt free." One lasts forever and the texture is fudgy and smooth.

1 bar is 100 calories, 7g of fat, 1g of fiber, 2g of sugar, 2 WWP

These are a classic ice cream bar with chocolate crisp coating. I’d rather a bowl of ice cream or the "free" fudge bar but these are a great low sugar snack when you want something cool and refreshing.

Top Your VitaTop Recipe Contest Underway!
