Greedy Recipe! Eggs on the Green with Crumbled Feta

How dare me unleash another egg recipe so soon after you just saw the delectable Steak & Eggs Quiche. What a wretched thing for me to do. But this latest egg dish right here is too damn beautiful & tasty to keep secret.

feta eggs Greedy Recipe! Eggs on the Green with Crumbled Feta

It takes 4 minutes or less to prep & cook it up in the microwave. No cooking utensils required. Just use your bare hands. No kiddin’.

INGREDIENTS

1/2 cup (approximate) raw, chopped spinach leaves. Just break into smaller pieces with your hands.2 eggs1-2 tbsp crumbled feta (approximate) ~ use as much as you’d likesalt & pepper to taste

DIRECTIONS

Lay chopped spinach at bottom of microwave safe bowl.Break two eggs over spinach.Microwave for 2.15 minutes or until eggs are set to your liking.Sprinkle on salt, pepper & crumbled feta.

It’s so dang easy to make this in the morning. Not too shabby for lunch or a light dinner either. Just add your favorite meat.

The feta in this dish with make your taste buds explode. The protein content is needed for building muscle. Cooking a complete meal 4 minutes or less will allow you more time to do most important thing ever in life: practicing your corpse pose.

I first reviewed Birds Eye Steamfresh Cut Green Beans way back in 2008, so it was definitely time for an update. Birds Eye Steamfresh Vegetables are packaged in a special custom designed bag. While microwaving, this special bag becomes a steaming vessel as it puffs up under the pressure of the steam created within the bag. Vegetables are steamed to a crisp, colorful and tasty perfection.

Serving Size: 2/3 cup (81 grams)
Calories: 30
Total Fat: 0%
Saturated Fat: 0%
Sodium: 0%
Carbohydrates: 5 grams, 2%
Fiber: 2 grams, 8%
Sugars: 2 grams

The package of Birds Eye Steamfresh Cut Green Beans that I bought is part of the "Pure & Simple" line, which means that it's not enhanced with any sauces or seasonings. The ingredients list simply states "green beans" and that's the way I like it. Green beans are my favorite veggies to eat cooked/ steamed, and this came out just as I expected - firm with a little softness to it and fresh but with a hint of sweetness.

Each 2/3 cup serving of Birds Eye Steamfresh Cut Green Beans provides 30 calories, no fat or sodium, 1 gram of protein, 2 grams of fiber (8% of the daily value) and 2 grams of sugars. There are about 4 servings in the 1 ounce (340 gram) bag that I bought for $1.93, so save extras in an airtight container for another meal - or snack on it throughout the day. Yes - I love green beans that much!

Don't hesitate to buy this in the grocery store if you see it. I ALWAYS have frozen veggies in my freezer - some steamable and some which can be made on the stove-top.

Green Giant Roasted Veggie Tortilla Chips (Zesty Cheddar) Review

Green Giant Roasted Veggie Tortilla Chips

Green Giant is now in the snack aisle with their vegetable based chips. A few weeks ago, I tried the Green Giant Multigrain Sweet Potato Chips, but they also sent me a sample of Green Giant Roasted Veggie Zesty Cheddar Tortilla Chips, which I recently tried.

NUTRITION FACTS
Serving Size: 10 chips (28 grams)
Calories: 140
Total Fat: 7 grams, 11%
Saturated Fat: 0.5 grams, 3%
Sodium: 190 mg, 8%
Carbohydrates: 18 grams, 6%
Fiber: 1 gram, 4%
Sugars: 2 grams
Protein: 2 grams

I must say I much prefer these tortilla chips to the sweet potato ones. They seem more flavorful, and had a healthy serving of "zesty cheddar." In fact they reminded me a lot of Doritos Nacho Cheese, but I actually prefer the Green Giant Roasted Veggie Zesty Cheddar Tortilla Chips.

Most people wouldn't consider Doritos healthy, but the nutrition facts for Green Giant Roasted Veggie Zesty Cheddar Tortilla Chips aren't much different. Each 28 gram serving (about 10 chips) provides 140 calories, 7 grams of total fat, 0.5 grams of which is saturated (11% and 3% of the daily value), 190 mg sodium (8% of the DV), 1 gram of fiber, 2 grams of proteins and sugars. Doritos has a little more saturated fat, but everything else is very similar.

The ingredients list is rather lengthy (way too much for me to try and type out), and it starts with whole grain corn, sunflower oil ad dried re and green bell peppers. All the other components are present at less than 2%. With a brand like "Green Giant" I associate it with wholesome products, so even for chips - I don't expect to see artificial colors like Yellow 6 Lake and Yellow 5 Lake or partially hydrogenated soybean oil, which doesn't add enough trans fat to be shown on the label (i.e. less than 0.5 grams).

So, I doubt that I'll be on the lookout for these chips in my supermarket.

Get Into My Food Trap! Silver Palate Cereal, Green Giant Steamers and Veggie Patch Broccoli Bites

I interrupt my regularly posted Taste Tests to bring you a brand new dish called “Get Into My Food Trap!”  No foods of pure nastiness shall be discussed right now – only the good ‘n tasty stuff that I’ve been chewing on behind closed doors. And now it’s time you knew about it:

Silver Palate Grain Berry Flakes: If you’re thinking bran cereal is only for the geriatric community with their grandma underpants, dentures and walking canes, go on and think again. There’s no actual berries in this bowl of bran, but the flavor makes up for any type of dehydrated fruit you thought would be included. The flakes are delicate, yet pack a crazy punch of crunch with lovely taste. Grain Berry Bran Flakes have so much swag, you’ll race to snag that last bit of milk for another bowl before your hungry family has a chance to wake up and scrape the crust outta there eyes. They snooze, they loose. They can eat a frozen waffle puck. Or a boiled egg or something.

Calories: 120 for 3/4 cup, Sodium: 180mg, Carbs: 24g, Fiber: 5g, Sugars: 5g, Protein: 6g

Green Giant Broccoli & Cheese Sauce Steamers: I had to read the back of the bag 3 times, because I couldn’t believe the directions were that simple. But, yep, it’s really easy. Just pop the entire bag into the microwave (no stabbing of the bag for venting is required). I cooked the package for 6 minutes, tore it open and ate the whole thing (damn right, I did). I don’t care that the package contains 3 servings. At 45 calories per serving, my stomachs can afford to accommodate all that greediness goodness. There were plenty of broccoli trees (not just a bunch of end-butt pieces like in other frozen broccoli packages). And I’m so glad the cheesiness was not over the top – just the right amount with no excessive globs of cheesy to calorically challenge the booty, thighs and cankles. Check out Green Giant product page for a breakdown of all the Steamers varieties. I’ll be eating more tomorrow.

Calories: 45 per 1/2 cup, Sodium: 200mg, Carbs: 7g, Fiber: 2g, Sugars: 3g, Protein: 6g

Veggie Patch Broccoli Bites with Cheese: Anytime a bacon-toting, carnivorous manly-man (my husband) asks you to throw some more broccoli bites into the oven, you know you’re onto something delicious. It looks like a chicken nugget, but a wee bit larger. Although the cheesiness is an afterthought (you can barely tell it’s in there) these hearty Bites taste great anyway. The breading looks extremely fresh, especially considering you don’t pick these up in the frozen aisle – go snag them out of produce. Husband wanted more. So did I. You can even get fancy and take the Bites to work for microwaving. If you are a fancy person, please give yourself 5,000 bonus points right this very second.

Calories: 160 for 4-pieces, Sodium: 400mg, Carbs: 18g, Fiber: 2g, Sugars, 2g, Protein: 6g

So there ya have it. My latest finds that deserve to get in my food trap over and over again. Try one or try ‘em all. You won’t be disappointed.

There’s Something To This Green Tea Thing For Weight Loss. Allow Me To Explain…

Remember when I asked the question, “will green tea make my fatty parts melt?“? That’s when I told you about my kids’ chubby Pediatrician who is chubby no more. He credits green tea drinking for his weight loss.

And remember how I shared with you how I incorporate green tea drinking into my Shakeology 3-Day Cleanses with good success?

Welp, I’m not blogging live from the Pediatrician’s office and not currently on a Cleanse, but something interesting is still happening. I started drinking 1 cup of green tea per day since the cold weather is back again. I’m not doing anything else different. And I gotta tell you, that measly 1 cup-o green tea is making me go pee-pee more. Black tea does NOT have this same affect on me.

Turn outs green tea acts as a diuretic. Lots of people have experienced the same pee-peeing thing as me. Is this how green tea partly accomplishes its proclaimed weight loss wonders? Welp, maybe, I guess. Green tea can obviously be good for people who need to let go of excess water weight that no doubt skews the number on the scale.

But there’s more to the green tea weight loss story….

Clinical studies suggest that green tea extract may boost metabolism and help burn fat. One study confirmed that the combination of green tea and caffeine improved weight loss and maintenance in overweight and moderately obese individuals. Some researchers speculate that substances in green tea known as polyphenols, specifically the catechins, are responsible for the herb’s fat-burning effect… [full article]

When I hear phrases like “fat burning effect” I tend to get skeptical, but green tea is a natural substance we’re talking about here. Green tea is food for our bodies. And the right food at that! Foods such as this truly have the power to heal, restore and make whole. This is a plus for me since love green tea so much, but which brands I am drinking? There are two green teas I prefer and recommend.

The 1st tea I recommend is Twinings of London Mint Green Tea.

Many green teas can very bold and bitter, but Twinings’ is my everyday tea because it doesn’t have those traits. The mint blend makes this tea experience much flavorful and easy for your taste buds to enjoy. You should easily be able to find Twinings on any grocery store shelf, but if not, you can get it online right here. Just watch the labeling because Twinings also has a regular green tea, so snag the right package. Make sure it says “mint green tea”.

The 2nd tea I recommend is Sencha Organic Green Tea.

Sencha was difficult to find at a regular store. I didn’t find it there at all, actually. I had to drive a few towns over to one of those hippie organic stores to pick up my Sencha. I read good stuff about it online, so I just had to taste it for myself. Although it’s organic, its surprisingly cheap to buy. Sencha is a full flavor green tea (no mint mix), but it somehow accomplishes a smooth, light flavor with no strong bitterness. It’s perfect!

I’m obviously going continue with my green tea drinking for warmth and leisurely enjoyment, but now I’ll also be paying close attention to how green tea possibly ushers me into my fitness goals faster.

I sweeten my tea with Stevia in the Raw, which you can definitely get at the grocery store. It’s a natural, zero calorie sweetener (not a chemical) derived from the Stevia Rebaudiana plant. But please, don’t buy the Truvia brand of Stevia – it’s got extra stuff added into it.

One word of caution: Drinking green tea on an empty stomach makes my tummy hurt. This may not happen to you, but if it does, just know that you have to eat something first (problem solved). There’s a ton of health benefits to green tea, including cardiovascular health and cancer prevention. Green tea is even linked to flu prevention, so drink up!

(Free Coupon Giveway!) I Entered Into The Valley Of The Jolly Green Giant

When the Green Giant called on me to enter into his valley of vegetables in Minnesota, I assumed he is a gentle creature, so I agreed to go. He’s a vegetarian, after all; not a hungry carnivore in search of a human buffet. Just look at how he towers over those trees. Go on….wave to him.

As you can see, I was very excited to not only meet the Giant, but also to wear a helmet and get access to the test plant to see how fresh corn goes from the cob into the can. Their Niblets happen to be the corn of choice I’ve been shoving into the Greedy Family’s food trap for years now, so seeing those Niblets get canned was like meeting a celebrity food.

What I appreciated more than anything was the enthusiasm of the people who work for Green Giant. The food scientists are really smart and truly dedicated to bringing the best product to our hungry tables. I honestly did not think there were companies out there that still cared. But guess what. Green Giant has respect for the consumer. It’s evidenced in how they do their jobs. Not only that, but they have respect for the land the food is grown on. Before I went on my trip, Health-hater Husband and I just happened to get into this crazy debate about how one day, our land wouldn’t be able to produce enough food to feed the explosion in the greedy population (but I disagreed). And alas! What I learned from the Giant is that they are harvesting more food from the same amount of land (compared to prior years) through their sustainability efforts.

From Green Giant’s Sustainability webpage: “Through farming techniques and better seed hybrids, we’re getting more vegetables from every acre of land. In fact, over the last 35 years our farmers have been able to double the amount of sweet corn they can produce on the same amount of land. That means more food for the world and fewer acres dedicated to agriculture.”

Booyah! Josie wins that debate. Health-hater is the loooser!

Everyone was amazing. The other bloggers who were invited, the Green Giant Team, their stellar PR firm (best firm I’ve ever dealt with), and the local peeps who helped to make it a wonderful event.

And know I ate good food, riiight? Just look at those vegetables! There was other stuff, too. Like pie. Just sayin’.

An ode of love to The Green Nut**

(yes the pose was her idea. extra points if you can read what her hat says.)

The facts: We (the royal we. the researched we) consume less of foods which require work on our part to shove into our nut-hole consume.

The numbers: When pistachio-studied we (don yer crowns! again the royal we.) tend to eat FORTY ONE PERCENT fewer of the green nuts when we have to shell versus having them pre-shelled for us.

The snack: We (the entire MizFit household Im not dragging you into this one) love these.  There are 49 in a serving which is both a bountiful snack and a fab opportunity for the Tornado to practice her pre-school counting skillz.

The memories: Lets just say we (OK I) were addicted to these as a child as well. I gave not a shit care they stained my fingers bright red (remember that?!) except for the fact it made it more of a challenge to deny the fact I’d consumed the whole bag/less easy to blame aforementioned consumption on my sisters.

I rediscovered my green nut love at Blissdom:

And it has been raging ever since.

Ive smuggled em into movies.

Ive toted em with me to playdates at the park.

Ive cooked with them (ok that’s a lie. Got any good pistachio recipes for me?)

Ive dragged Ren Man & the Tornado into my love as well (there’s been a little dissension in the ranks. They *adore* the salt & pepper green nuts.  Im a hardcore PLAIN misfit).

This post today is purely to share my smittennessment & remind you of a snack I’d somehow forgotten.

Review: Green Lite Bites cookbook

Green Lite Bites - The cookbook!

Disclosure: I was sent a free copy of this cookbook to review. Also, Roni is a cool chica I’m proud to call my friend.

Roni from Green Lite Bites (and a couple zillion other sites) published her first cookbook this year. It’s called Favorites from the First Three Years and contains—you’ll never guess!—her favorite recipes from the first three years of food bloggin’.

I’ve got to give Roni big props because her cookbook is beautiful. She put it together while raising a kid, incubating a new one, planning a blog conference and working for herself full-time, so honestly she’s making us all look bad. It’s got lots of large, full-color photos that make you want to eat the pages. Each recipe also has three tips or suggestions for variations on the recipe in case you don’t like one of the ingredients or just want to switch things up. She even calculated the calories, fat and fiber information for each recipe, which means she’s good at cooking and math. I also enjoyed the short introduction that explained what cooking and healthy eating has meant to her. The only thing that could have made this cookbook better is if it had come with the food it tells you how to make.

Don't eat the pages!

The cookbook is a paperback coming in at 80 pages, but she packs a lot of content into those pages. I prefer to have a smaller cookbook where you actually make the recipes instead of having a big, fat, heavy one that you use for 2 or 3 meals at most. 90 Days of Shakeology: Days 42-62 It was a rough 20 days. I got super busy with just about everything – work, home, kids, blogging, ebook writing – I’ve been late for work, running on about 4 hours sleep each night, and NOT slurping my Shakeology consistently. SoBe Lean Honey Green Tea

SoBe Lean Honey Green TeaAlong with the Snapple Green Tea Metabolism (Original), another beverage I bought at the same time to review, was the SoBe Lean Honey Green Tea. Both are "all natural", but the SoBe tea has no calories, whereas the Snapple has 60 calories per serving. Both are "green tea" flavors though, so I wanted to see if i could find a refreshing zero calorie alternative to the very tasty Snapple Green Tea Metabolism. The first sip of the SoBe Lean Honey Green Tea was dominated by a weird, awful flavor - it's so hard to describe ... maybe like when lemons go bad, but not as intense (since this has water & other stuff added). In subsequent sips, this god-awful taste seemed a little less pronounced and a lemony taste seemed to come through as well. But there was no saving this. I drank about 1/3rd of the bottle, gave the boyfriend the rest to taste test (which he hates doing because he claims I only want him to try the bad stuff). He took a sip and that's all he could handle.

As mentioned before, there are no calories in this tea, and the ingredients are, filtered water, erythritol, natural flavor, citric acid, pectin, acerola fruit extract, Reb A, potassium citrate, green tea, caramel color, honey.

I have experienced a similar taste with another Stevia (Reb A) sweetened tea, or it might be a combination of the Reb A and erythritol. Whatever the reason, I seriously regret spending the $1.99 for a 20 ounce can of SoBe Lean Honey Green Tea. And the worst thing is that I spent a good 20 minutes looking at different beverages trying to decide which one to buy. I hate when I have to do a negative review because it means I've wasted precious $$$ and time - and of course, I don't want to alienate a future employer wink.

No I will not be buying this again - I would rather have bought a flavored water, or another iced tea. Maybe I ought to just leave the "Honey Green Tea" flavors alone. I didn't have much success with the Sweet Leaf Mint and Honey Green Tea either!

Snapple Green Tea Metabolism (Original)As I was headed to a workout, I stopped at a gas station to grab something for my car. I decided that I would pick up something to hydrate with - and that I could review! As I scanned the available options, the clean but elegant label of a bottle of Snapple Green Tea Metabolism caught my eye. We have already reviewed the Snapple Red Tea and White Tea, so it was high time that the Green tea got it's time to shine in the spotlight.

Thankfully, the bottle was already chilled, so I had about half the bottle on my way to the gym, and it made me go mmm! The tea flavor really comes through with NONE of the bitterness associated with green tea extract. It is mildly sweet - a little sweeter than most flavored waters, but certainly nowhere near sweet tea. This Snapple has a simple, clean flavor profile which was quite enjoyable.

So why "Metabolism" you ask?! Well, apparently there is a small study that shows green tea extract (in particular, the antioxidant EGCG), has been found to boost metabolism slightly. I liked that the bottle of Snapple Green Tea Metabolism tells us the exact amount of EGCG in the bottle (55 mg), although it would have been nice to know just how much is needed daily to affect metabolism (apparently it's 90 mg).

An 8 ounce serving of Snapple Green Tea Metabolism (Original) provides provides 60 calories from 15 grams of sugars - that's between 3-4 teaspoons. The ingredients are filtered water, green tea concentrate, citric acid, green tea, ascorbic acid (vitamin C), natural green tea extract, natural flavors. There is also 14 mg of caffeine per 1 cup serving.

The bottle I purchased, for $2.25 at the over priced gas station, contained 17.5 ounces, so 130 calories and 33 grams of sugars! That's quite a lot of sugar from one gulp. So this is not something I would sit around drinking bottles of daily, but I thought it was perfect for a before and after workout refreshment. Yes, just 1 bottle can do double duty.

And my Snapple bottle cap had Real Fact #736. "More babies are born at night than during the day."

TCedarlane All Natural Egg White Omelette With Uncured Turkey Bacon, Vegetables & Cheese blew me away and the Cedarlane Beans Rice & Cheese Style Burrito - so yum! So as I was browsing the frozen food aisle, another Cedarlane product caught my eye and I decided to try the Green Chili & Monterey Jack Cheese Tamales.

Now, I don't eat too many tamales, however, I can tell you that these are stuffed with lots of creamy cheese and a touch of crunchy veggies. The masa (the soft dough-like casing that surrounds the fillings) is thick and soft, just as it should be. When combined with the creamy filling, the overall mouth feel is smooth, with a slight textural difference from the al dente onion and spicy green chilis. The flavor profile was wonderfully developed, but perhaps a bit more of the roasted red pepper sauce would have made things even better. The masa to filling ratio was just a touch off with less emphasis on the latter, but I still enjoyed it.

I enjoyed the first tamale that is. By the time that I got to the second one, the mushy, doughy nature of the dish was getting to me though.

How can this whole plate of substantially filling food only provide 290 calories? The 9 grams of protein and 4 grams of fiber packed into each dish is a welcomed attribute, as is the short and all natural, mostly organic ingredient list. The 700mg of sodium (30% of the daily value) and somewhat high fat content of 11 grams of total fat, which includes 5 grams of saturated fat (due to the organic cheese, milk and oil) might make you think twice though.

I would like to suggest that Cedarlane offer one tamale with a side of some sort, instead of two, dense and doughy tamales - it was just a bit too much.

I paid $3.79 for Cedarlane Green Chili & Monterey Jack Cheese Tamales and, although it was delicious and the spices were spot on, the texture was too monotonous and the dish gave me a stomach ache of sorts by the time I had devoured the whole tray. The only reason I would shell out four bucks for this meal again, would be if I had a stove to cook up some crunchy veggies as a side dish or roasted chicken and a friend to split the dish with.
