Grilled Shrimp with Fire-Roasted Cocktail Sauce

Though this recipe is perfectly scrumptious served as a classic shrimp cocktail with steamed shrimp, the smokiness of the grill adds a rich layer of…you guessed it, flavor to this timeless appetizer.

Makes 4 servings

1 tablespoon olive oil

1/2 teaspoon garlic salt

16 jumbo shrimp (about 1 pound), peeled and deveined

1 cup Fire-Roasted Cocktail Sauce (see below)

1 tablespoon chopped flat-leaf (Italian) parsley

1 lemon, cut into 4 wedges or 8 slices

Preheat a grill to medium-high or preheat a grill pan over medium-high heat.

Combine the oil and garlic salt in a medium bowl. Add the shrimp and toss well.

If using a grill, place the shrimp on skewers before placing on grill. Place the shrimp on the grill or grill pan and cook for about 3 minutes on each side, or until pink and firm. Remove from the heat.

Spoon 1/4 cup of cocktail sauce into each of 4 decorative glasses. Top with 4 shrimp per glass. Sprinkle with the parsley and garnish with the lemon wedges or slices.

Per serving: 150 calories, 5 g total fat (1 g saturated), 170 mg cholesterol, 340 mg sodium, 2 g total carbohydrates, (1 g sugars), 0 g fiber, 23 g protein

Fire-Roasted Cocktail Sauce

This zippy cocktail sauce doesn’t contain any sugar, unlike most bottled brands available in the supermarket. If you prefer a milder cocktail sauce, omit the horseradish. This is the perfect dip with fresh seafood, such as the Grilled Shrimp Cocktail

Makes 1 cup

1 cup canned no-salt-added fire-roasted diced tomatoes

1 tablespoon horseradish

1 tablespoon lime juice

1/4 teaspoon Chipotle Puree (page 000; optional)

Combine all the ingredients in a blender or food processor and puree until smooth. Transfer the sauce to a jar and chill for at least 30 minutes before using to let the flavors meld. The sauce will keep in the refrigerator for about 1 month.

Per 1/4 cup: 20 calories, 0 g total fat (0 g saturated), 0 mg cholesterol, 160 mg sodium, 4 g total carbohydrates (2 g sugars), <1 g fiber, 1 g protein

Lean Cuisine Shrimp Alfredo Review

Lean Cuisine Shrimp Alfredo

Alfredo sauce usually isn't that healthy since it's usually made with cream, but Lean Cuisine found a way to incorporate just enough in their Lean Cuisine Shrimp Alfredo dish, without breaking the calorie bank.

NUTRITION FACTS
Serving Size: 1 meal (255 grams)
Calories: 210
Total Fat: 4 grams, 6%
Saturated Fat: 2 grams, 9%
Sodium: 650 mg, 27%
Carbohydrates: 28 grams
Fiber: 3 grams, 11%
Sugars: 3 grams
Protein: 15 grams

After the dish was microwaved and ready to eat, I was pleased with the texture of the shrimp and the vegetables, which consisted of broccoli and peas (which there was a lot less of). The linguini pasta was also good, but I found the Alfredo sauce to be a bit thin and watery - but that's definitely one way to cut calories and fat a bit, so I didn't mind too much. The shrimp was delicious (there were 7 pieces - I counted), and overall, I thought the entire meal made for a tasty, pleasant lunch - with a side salad to make it more filling.

Each 225 gram package of Lean Cuisine Shrimp Alfredo provides 210 calories, 4 grams of total fat, 2 grams of which is saturated (6% and 9% of the daily value) and 60 milligrams of cholesterol (20% of the DV). There is also 650 milligrams of sodium (27% DV), 15 grams of protein, 3 grams of dietary fiber (11% of the DV) and 3 grams of sugars.

The packaging mentions that there are no preservatives and the ingredients list starts with blanched linguine (water, semolina, wheat gluten), skim milk, shrimp, broccoli, water and peas - the good stuff is right at the beginning of the list - always a good sign.

I paid $2.20 for this entree (sale price) and there was so much that I liked - the low calorie, protein, shrimp, veggies and even the sauce - so I would definitely buy this again.

SeaPak Shrimp Co. Salmon Burgers Review

SeaPak Shrimp Co. sent me a box of their (frozen) Salmon Burgers to try out. The description on their website left me intrigued ... "a different kind of burger," they say. "Our All-Natural Salmon Burgers are a great way to get a healthy dose of your Omega-3's - there are 680mg per serving! Plus, they have no additives or preservatives. Enjoy these perfectly seasoned burgers right off the grill or straight from your oven." Well since it's the middle of winter, there would be no grilling, and I opted to pan-sear 4 of these babies.

Oh my goodness these salmon burgers were amazing. The delicious characteristic salmon flavor is there, and it is well seasoned. I'm surprised to hear myself saying this, but my only slight criticism is that they were a bit too salty ... but the burgers were still delicious.

Each 91 gram Seapak Shrimp Co. Salmon Burger provides 110 calories, 5 grams of total fat, 1 gram of which is saturated (7% and 4% of the daily value), 340 mg cholesterol (12% of the DV), 340 mg sodium (12% of the DV), no fiber or sugars and 16 grams of protein.

The ingredients are salmon, water, contains 2% or less of autolyzed yeast extract, canola oil, garlic powder, garlic, grill flavor (from sunflower oil), lemon juice concentrate, natural food coloring (beet juice, citric acid), natural smoke flavor, onion powder, paprika, rosemary, salt, soybean oil, tapioca dextrin, white pepper.

The nutrition facts aren't bad at all - I was expecting more total fat, and this is an all-natural product. A box cost $4.69 at my local Wal-mart - but as I mentioned before, I received a box (with 4) from the company. Delicious and worth every penny. Trader Joes Salmon Burgers has less sodium, so if there is a TJs near you, check it out as well.
