10 Light Holiday Cookie Ideas from GreenLiteBites

Christmas is coming and in my house that means baking season is upon us!

One of my absolute favorite things to do is making cookies with the kids. It was one of my fondest memories as a kid.

Yup that’s me! Sick that Christmas that’s why I didn’t look too happy (accoring to mom,) but I remember loving every moment of it every year. It was something I couldn’t wait to do with my own kids.

Over the last few years I’ve experimented with a few cookie ideas that I can have fun making and feel good about eating and feeding my kids.

There’s nothing wrong with traditional cookie recipes, but making things just a little lighter and healthier is fun challenge for me. Why not try to minimize calories and maximize nutrition while indulging in holiday traditions?

I just don’t see the harm in it. If they don’t turn out than you could always fall back on the classics. I mean how many sugar cookies recipes exist anyway?

Amy's Light & Lean Spinach Lasagna Review

I was trolling the frozen food aisle of the supermarket recently when I spotted Amy's Light & Lean meals. They provide less than 300 calories and 5 grams of fat, so I picked up a few to try, including Amy's Light & Lean Spinach Lasagna. I'm already a fan of Amy's Tofu Vegetable Lasagna (Review) and Amy's Vegetable Lasagna (Review), so I had high hopes for this as well.

Lasagna is not something that microwaves well, so I followed the directions loosely - Amy's has something about nuking on high for a few minutes, then switching to medium power, but alas, I have no clue how to switch that setting on my microwave. So I put a slit through the middle of the film, microwaved for 3:30 minutes, then took the film off, turned the lasagna over, and microwaved for another minute. It came out perfectly heated throughout - no cold spots in the middle.

The nice thing about turning the lasagna over half-way throughout, is that both the top and bottom had a nice layer of the pasta sauce, which was slightly sweet, and not too tomatoey - delicious! The layers of lasagna and cheesy spinach held together well (even with all the flipping I did), and I enjoyed it immensely. It certainly doesn't taste like they left anything out to make this "light."

Each Amy's Light & Lean Spinach Lasagna entree provides 250 calories from 5 grams of total fat, 2.5 grams of which is saturated (8% and 13% of the daily value), 540 mg sodium (23% of the DV), 5 grams of fiber (20% of the DV), 6 grams of sugars and 11 grams of protein. There is also 40% of the DV for vitamin A and 20% for vitamin C as well as calcium. The ingredients list is all natural, soy-free, and organic.

Amy's Tofu Vegetable Lasagna (Review) has 310 calories and 11 grams of total fat, which is 18% of the daily value; and Amy's Vegetable Lasagna Review has 310 calories, 12 grams of fat and 4.5 grams of saturated fat (19 and 24% of the DV).

I bought this meal for $3.69, which is a little more than the price of other frozen meals, but I would buy it again - the little extra money for the organic ingredients in a tasty product that's low in calories and high in fiber & protein is worth it.

What do you do when you crave cheese, but not all the fat that goes with it - not to mention that you cannot limit your portion once a piece goes in your mouth?! Well, my solution is to always have some spreadable cheese wedges on hand. While I was replenishing my supply, I came across The Laughing Cow Light Queso Fresco & Chipotle Flavor Spreadable Cheese Wedges - it's described as, made with real queso fresco and chipotle peppers ... a great way to add spice to your favorite dishes without stacking up the calories.

At snack time, I spread a wedge on a few (or maybe more than a few) Keebler Town House Light Buttery Wheat Crackers (Review) - the cheese was creamy, soft and very spreadable. I didn't get much of a spicy kick though and since it says Chipotle, I expected that it would bring the heat! I also sat down and ate a wedge while writing this review - just trying to savor each bite, and that's when a little more of the spicy chipotle flavor came out. BUT if the Laughing Cow Queso Fresco & Chipotle Cheese Wedge was in a contest with Weight Watchers Jalapeno Cheese Wedges (Review), I would give the prize to the Weight Watchers cheese.

Each wedge of the The Laughing Light Cow Queso Fresco & Chipotle Flavor Spreadable Cheese provides 35 calories from 1.5 grams of total fat (3% of the daily value) which includes 1 gram of saturated fat (5% of the DV), 240 mg sodium (10% of the DV), 1 gram of sugars (no fiber) and 2 grams of protein. The ingredients include, cheddar, light cheddar, queso fresco and semi-soft cheeses (cultured milk and skim milk, salt, enzymes), whey, cream, chipotle peppers, sodium phosphate, sodium citrate, natural flavors.

I purchased a pack with 8 wedges for $2.69, and I would buy these again just to get some flavor - although it's not that much different from the The Laughing Cow Light Creamy Swiss Wedges (Review).

I picked up Amy's Light & Lean Soft Taco Fiesta, realizing that I hadn't yet tried any of the varieties in this line. Each of the meals in Amy's Light & Lean line provides less than 300 calories and contain 5 grams of fat or less. In addition, as with all Amy's products, Light & Lean Meals are organic, vegetarian, and are made without the use of trans fats or GMOs.

When this emerged from the microwave, it looked like a hot mess - really it looked like puke. I was very apprehensive and was literally scared to take a bite. But wouldn't you know it - this is one of those foods that looks disgusting but tastes amazing! It's exactly as is described on the back of the box - a layer of black beans and cheese on top of a soft corn tortilla - below that is a bed of brown rice, shredded vegetables & sweet corn. It sounds complex, but it's delicious. I cut through all the layers with my fork and made sure to have some of the flavorful black bean & cheese layer along with a piece of the soft corn tortilla and a little rice. I'm not kidding when I say I ate the entire thing - not even a single rice grain was left by the time I was done.

Each bowl of Amy's Light & Lean Soft Taco Fiesta (227 grams), provides 220 calories, 4.5 grams of total fat, 1.5 grams of which is saturated (7% and 8% of the daily value), 560 mg sodium (23% of the DV), 5 grams of fiber (20% of the DV), 6 grams of sugars and 7 grams of protein. There is also 25% of the DV for vitamin C and 20% for vitamin A.

I purchased Amy's Light & Lean Soft Taco Fiesta bowl for $3.18 - at the same time I bought other frozen dinners for $2.50. Amy's meals (and Kashi's too) are usually more expensive than Healthy Choice, Lean Cuisine & Weight Watchers, but at this price point, which is not too much more than the other meals, I would definitely buy this meal again. Not only does it make a tasty and filling lunch, but the nutrition facts & ingredients list are quite impressive too.

Because it's summer, I've been trying out a lot of different beverages and drink mixes, some naturally delicious (like, Natalie's Orchid Island Juice Company 100% Florida Grapefruit Juice (Gourmet Pasteurized)), but with quite a bit of sugar; and some low calorie i.e. sugar free or close to it, like Crystal Light Margarita "Mocktail". 4C Totally Light Cranberry Pomegranate Antioxidant Sugar Free Drink Mix belongs in the that latter category.

A serving size of 1/8th tub (which makes 1 cup of drink) provides less than 5 calories, i.e. has 0 calories on the nutrition label. The first time I tried this, I really didn't like the intense, metallic tart flavor. A look at the ingredients list shows that citric and ascorbic acid are the 1st 2 ingredients, so I should have expected such an intense acidic taste. The next time, I added even more water, and although it was still tart, it seemed more manageable and I didn't hate it quite as much.

The other ingredients include, artificial cranberry flavor, potassium and sodium citrate, acesulfame K, purified polyphenols (antioxidants), natural and artificial pomegranate flavor, sucralose, gum arabic, magnesium oxide (prevents caking), FD&C Red 40, tricalcium phosphate (prevents caking), FD&C Blue #1.

A container of 4C Totally Light Cranberry Pomegranate Antioxidant Sugar Free Drink Mix, which has 7 tubs, costs $6.99 - each tub makes 2 quarts. I would buy this again if it were deeply discounted - like if I saw it at the Dollar Store. Otherwise, I'll stick with Crystal Light Peach Iced Tea (Review).

Crystal Light Pure is the low calorie "naturally" sweetened alternative to the other Crystal Light drink mixes, which are normally sweetened with aspartame & acesulfame K. I've had mixed feeling about the different flavors of Crystal Light Pure that I've tried so far - I didn't like the Tropical Blend, and thought the Lemonade was okay - but not without some tweaking. This week, I tried the Crystal Light Pure Mixed Berry to see if there was finally a variety that I would enjoy.

I have to say that this is short on any sort of berry flavor and long on the characteristic tart, citric acid taste ... but it was okay to drink, and maybe the best of the 3 Crystal Light Pure flavors that I've tried so far. A 1/2 packet serving of Crystal Light Pure Mixed Berry Drink Mix provides only 15 calories from 3 grams of sugars. The sweeteners used are sugar and rebiana (Truvia brand sweetener).

The ingredients are sugar, citric acid, malic acid, maltodextrin, calcium lactate, contains less than 2% of raspberry juice solids, natural flavors, rebiana (Truvia brand sweetener), potassium citrate, magnesium oxide, sodium citrate, dried radish, black currant, and apple juices (for color). The suggested retail price is $3.29 for a box with 7 packs - but I received samples for review.

Although I thought the taste wasn't horrible, I probably will not be buying this in the future. My favorite Crystal Light products are the mocktails (Appletini (Review), Margarita (Review) & Mojito (Review)).

Order a: Side Salad with vinaigrette, small fry, a McChicken plain and a courtesy water.

Open the chicken sandwich, remove the bun and cut into chunks.

How to Eat at Light AND Cheap at McDonalds 2

Top the side salad with the cut up chicken and drizzle about 1/4 of a packet of dressing.

How to Eat at Light AND Cheap at McDonalds - 3

~ 410 calories, 20g of fat, 43g carbs, 5g of fiber, 13g of protein. That’s 9 Old WWP or 11 new WWPP.

Total cost: $3.18

And not a bad looking meal!

Swap the apple dippers for fries and shave 200 calories and 11 g of fat from the meal for the same price. Although, I don’t know about you, when I go to McDonald’s I’m getting fries. ;)

Disclaimer: I’m not claiming McDonald’s to be healthy. I’m just saying it is possible to eat light and cheap there (as with any fast food place). You just have to WANT to.

I LOVE the summer and I love hot temperatures. One of my favorite things to do is set up in a nice shady spot with a drink and a good book. That's exactly what was on my mind after putting in some long hours a few days week. I had a Crystal Light drink to review - Crystal Light Peach Iced Tea (thanks to my advertising network, Glam Media), and I was almost finished with the AMAZING book, Kindred by Octavia Butler.

This low calorie peach iced tea was just the thing for a hot summer day. The flavor is spot on - sweet, peachy and not too tart. One packet makes a tall glass, or 16.9 ounces, and I ended up using a few packets and making a pitcher for the afternoon. I haven't looked back Luckily, each 8 ounce serving of Crystal Light Peach Iced Tea (half of one packet), provides only 5 calories.

The sweeteners used are aspartame and acesulfame K, and it also contains a few artificial colors - Red 40 Lake, Red 40, Yellow 6 Lake, Yellow 5, Blue 1 Lake and Blue 1 - why so many Crystal Light?!

A box with 10 packs cost $2.19 at my local grocery store, but as I said before, I received samples for review. The Crystal Light Peach Iced Tea flavor was really delightful. I would buy this in the future, and although I do drink a lot of water thanks to working out more, I don't think I could live without having some flavored drinks a few times a week. And the book I was reading - Kindred - so good - reading about slavery is not easy for me since my not-too-distant ancestors were on the wrong end of the whip - but Octavia Butler managed to make an interesting and moving story - with a science fiction twist.

Recently I was wandering through the supermarket aisles - as usual - when I came to Banquet Brown 'N Serve Sausages. I buy these occasionally, and since they were on sale, I decided to try the Light Maple Sausage Links.

For once I didn't over-cook the sausage links, and they came out to be sooo tasty - slightly sweet, slightly salty, juicy, and all good ... way better than the Original, and WAY better nutrition facts also. Each serving of Banquet Brown 'N Serve Light Maple Sausage Links (3), provides 130 calories from 9 grams of total fat, 3 grams of which is saturated fat (14% and 15% of the daily value), 450 mg sodium (19% of the DV), 2 grams of sugars and 9 grams of protein. The Original provides 200 calories plus 28% and 30% of the DV for total and saturated fat.

The ingredients are mechanically separated turkey, turkey, water, pork, soy protein concentrate, contains 2% or less of: BHA, BHT, brown sugar, caramel color, citric acid, corn syrup solids, dextroase, natural flavoring, salt, soy lecithin, spices, sugar and maple sugar.

A box of Banquet Brown 'N Serve Light Maple Sausage Links (10 links) cost $1.29 on sale. Since they have much less fat and calories than the Original, and they taste better in my humble opinion, this makes a rather worthy substitution - and I would buy these again.

After enjoying a pitcher of Crystal Light Appletini the other day, I decided to try another "mocktail" flavor, Crystal Light Margarita.

After a long day of work, I sat out in the back yard - good book in hand (Dime Store Magic), and a glass of this non-alcoholic margarita. The husband was a grilling and I was a chilling! Well, my neighbors must have smelled something good because before you know it, there was a party, and more Margaritas had to be made - a good indication that this was a hit! It's not as tart as the Crystal Light Appletini, but it's still just tart enough ... and those who made it an alcoholic beverage also seemed to think highly of it.

The sweeteners used are aspartame and acesulfame K, and a container of Crystal Light Margarita (which has 5 packets) costs $2.99. I think I prefer this to the Appletini only because it's a little less sour, but I do like both, and I would certainly buy it occasionally - I drink a lot of water but every few days I have to have a beverage with a little flavor (other than wine).

Crystal Light Appletini Review

Crystal Light put out some limited edition sugar-free (and alcohol free) cocktails, aka "Mocktails", just in time for summer. Have you seen Crystal Light Margarita, Mojito or Appletini yet? I received a few samples to review, and first up was the Appletini.

I followed the package directions and emptied the contents of a packet into a pitcher and added 8 glasses of water, and then poured it into a glass with crushed ice. Well, if you've ever had Crystal Light, you knew to expect a tart flavor and it's also strongly "green apple" flavored. I really liked it ... and if you choose to make a real appletini with this (meaning add vodka), it's pretty darn good too.

A serving of Crystal Light Appletini (1/8th of the packet or about 1 cup of drink) provides 5 calories. The sweeteners used are aspartame and acesulfame K, plus the ingredients list also contains citric acid, maltodextrin, natural flavor, modified cornstarch, and less than 2% of magnesium oxide, yellow 5 and blue 1.

A container of Crystal Light Appletini (which has 5 packets) costs $2.99. If you don't mind drinking beverages sweetened with aspartame (and personally I don't drink them very often), and if you like drinks more on the tart side, then this is for you. Oh - and of course, it can be used to make a lower calorie mixed drink, like regular appletinis or apple sours ... not that Crystal Light advertises such a use, but that's what someone in my household used it for - not naming names, but pointing at the hubby.

Crystal Light Pure is a low calorie drink mix that has no artificial sweeteners, flavors or preservatives. The Lemonade is sweetened with a combination of sugar and rebiana (Truvia brand sweetener).

I followed the directions on the packaging and added 2 cups of water to a packet of Crystal Light Pure Lemonade. After shaking vigorously, the result was a very tart flavor of lemonade, but I much preferred this to Crystal Light Pure Tropical Blend. In my mind, this was a good starting point, but needed tweaking. Ironically I added a pack of Splenda and a little more water and got something that made my taste buds more happy. But - adding Splenda defeats the purpose of an "naturally sweetened" drink mix, but just adding less water didn't work for me.

A 1/2 packet serving of Crystal Light Pure Lemonade provides only 15 calories from 3 grams of sugars. Dannon Light & Fit Raspberry Yogurt Review

Dannon Light & Fit Raspberry YogurtFrom all the Dannon Light & Fit review we've done, you'd think we were attempting to try all the flavors - and you'd be right! I got my eager little hands on Dannon Light & Fit Raspberry Yogurt and decided to buy it and see how it compared to Dannon Light & Fit Blackberry Yogurt.

Who would have known that the Raspberry would turn out to be one of my absolute favorite Dannon flavors! Sure, it's pretty simple (no exotic name like Yoplait Light Pineapple Upside Down Cake Yogurt or Breyers Light Boost Immunity Black Cherry Jubilee Yogurt), but simple can be messed up, and in this case, they did it perfectly right.

Whenever I eat Dannon Light & Fit in Raspberry, I honestly feel like I'm eating a dessert. Sure, it might not be quite as thick as the Greek yogurts, but the flavor is so smooth and creamy that I don't care.

Each 6-ounce serving of the yogurt provides 80 calories,no fat, 11 grams of sugar, 5 grams of protein, and daily values of 8% for vitamin A, 15% for calcium, 20% for vitamin D, 20% for riboflavin, and 15% for phosphorus.

The sweeteners used are fructose, acesulfame K, aspartame and sucralose. If you;re not into artificial sweeteners, then this is not the variety for you. Each container of Dannon Light & Fit Raspberry Yogurt cost me 80 cents, and I will continue to buy this in massive quantities. I tend to eat my yogurt just the way it comes for the most part, with no extra goodies - although sometimes I'll toss in a little granola if I have some. What's your favorite topping for yogurt?

Love Pina Coladas but hate the extra calories and fat? At over 500 calories per cocktail (and possibly a lot more, depending on what size you get), these are a nutritional nightmare. It might not be an exact substitute for the alcoholic beverage, but it tastes pretty darn good!

Like all Dannon Light & Fit yogurts (read our reviews), this stuff is a bit on the thinner side compared with other low-fat or fat-free yogurts. However, the taste more than makes up for it with pineapple and coconut flavors that shine but don't overpower. Pineapple is actually one of the ingredients too - so it's not just pineapple flavoring - but coconut is nowhere to be found. I was really amazed at how dessert-like this tasted.

Each 6-ounce container of Dannon Light & Fit Pineapple Coconut Yogurt provides 80 calories, no fat, 16 grams of carbs, 11 grams of sugars, 5 grams of protein, 20% of the RDA for riboflavin and vitamin D, 15% for calcium and phosphorus, and 8% for vitamin A.

The ingredients list starts with nonfat yogurt, water, pineapple and fructose, and the sweeteners used are aspartame, acesulfame K and sucralose - 3 non-natural sugars combined (plus fructose), but the taste is incredibly natural, not to mention delicious.

I bought a 6 ounce container for $1.25, but they are regularly on sale. Dannon Light & Fit Pineapple Coconut Yogurt is definitely a flavor that I would buy again.

Breyers Light Yogurt (Cinnamon Bun) Review

Breyers Cinnamon Bun Light YogurtBreyers Light Yogurt comes in a ton of interesting flavors, many of which have dessert-inspired flavors, such as Black Cherry Jubilee, Strawberry Cheesecake). The yogurt was on sale for 79 cents, and since I had already tried the Breyers Vanilla Bean Light Yogurt, I decided to try the Cinnamon Bun flavor, eagerly anticipating some future delight.

Unfortunately, I was very disappointed with the flavor. This was pretty sickeningly sweet, and it didn't taste too much like cinnamon buns at all - not even a close cousin. True, that's a hard flavor to imitate and the lack of texture is a shame, but why put it out as such if you can't get it just right?! The consistency was pretty thin as well, further adding to my dismay.

At least the nutrition facts are decent. Each 6 ounce serving of Breyers Light Yogurt (Cinnamon Bun) provides 80 calories, no fat or fiber, 7 grams of sugars and 6 grams of protein.

After trying a lot of different brands of 'light' yogurts, it was time to return to the one that started the trend - Yoplait Light. This was one of the first light yogurts I ever had, and it's still one of my favorites. There used to only be the standard Berry flavors, but now there are quite a few more 'indulgent' flavors, such as Apple Turnover Yogurt, Red Velvet Cake, Black Forest Cake and Pineapple Upside Down Cake, which is what I recently tried.

The flavor was rather pleasant, in fact, I liked it quite a lot. The yogurt is sweet and there was a strong taste of pineapple flavoring, but no hint of any artificial sweetener taste. I would have liked some little pineapple chunks mixed in there too though, but I knew full well that this wasn't a 'fruit on the bottom' yogurt, but I think the texture would have made a delightful difference.

Each 6 ounce serving of Yoplait Light Pineapple Upside Down Cake Yogurt provides 110 calories, no fat or fiber, 15 grams of sugars & 6 grams of protein. The sweeteners used are high fructose corn syrup & aspartame.

I regularly see the 6 ounce containers for $0.59 at Wal-mart, which is where I purchased mine from - that price really can't be beat! Yes, I like my Greek yogurt as much as the next person, and Chobani 2% All Natural Greek Yogurt (Pineapple) does taste delicious, but I'll also take the lower calories, sugars and price of Yoplait Light Pineapple Upside Down Cake Yogurt.
