Excuse Me While I Bacon Jerky

Move over canned bacon. Bacon Jerky is here!

I’m ripping into the bag right now and getting a whiff of what smells like fresh, sizzling swine strips. This is a bewildering observation. The aroma is causing my nostrils to flare with approval. The idea that bacon jerky would smell like pure nastiness has been debunked.

Okay ya’ll, now I’m pulling a bacon jerky strip out the bag. Huh? It has the appearance of being freshly cooked, as if it just jumped out the frying pan right this very moment and onto my plate. This is another observation that brings confusion. My preconceived notion expected a very crappy experience before this point in the sampling. The bacon looks delicious.

Welp, I expected an overwhelming amount of saltiness, but didn’t get that either. It possesses only a pleasant level of saltines that high quality bacon brings. It tastes good ya’ll!

It’s meaty. It’s chewy and doesn’t have the texture of leather that threatens to rip the teeth out your mouth with each bite. This bacon jerky is fantastic enough that I could fool someone into thinking I just cooked it. YASSS! I am impressed.

Sidenote: If you’re totally appalled by the concept of bacon jerky, think again as you consider a tasty protein source for long rides in the car, camping, long term food storage and/or emergency food preps.

My Homemade Knockoff of the KFC Cheesy Bacon Bowl

Is it just me, or is the TV is trying to stuff the new KFC Cheesy Bacon Bowl commercial down our throats? I was in the kitchen cooking when I heard that dang commercial playing for the 1,567th time.

That’s when I realized I had all the ingredients on hand to make my own homemade knockoff of the Bacon Cheesy Bowl. I didn’t overthink it. I just grabbed stuff to throw the meal together really fast.

This is what I used:

I’ve never had a real KFC Cheesy Bacon Bowl (and absolutely never will) but I considered my homemade version something I could sink my tooth into since I’m the one controlling the ingredients and portions.

Mashed potatoes and cheesiness is a great combo. When you throw in corn, gravy and quality fake chicken, it gets better. But it’s that damn bacon that really put this homemade knockoff over the edge.

As you can see from the pic, I barely used any bacon, but hot dang if that little bit of bacon didn’t make this meal a winner. The bowl I used was baby-ish in size, so this dish, with its small portions of potato-carbs and gravy-cheesiness, didn’t have the power to screw up my day of good health.

I had fun making this knockoff. Let’s maybe see what else I can do. Whacha think?

90 Days of Shakeology: Days 42-62 It was a rough 20 days. I got super busy with just about everything – work, home, kids, blogging, ebook writing – I’ve been late for work, running on about 4 hours sleep each night, and NOT slurping my Shakeology consistently. In the time when I need it most, I slacked off and made excuses why I couldn’t take 5 dang minutes every day to make the shake that has personally proven itself to give me the energy I so desperately need. In the last 20 days, I’ve had my Shakeology probably 10 times. So that’s basically every other day instead of consistently EVERY day. What’s wrong with that, you say? Welp, I do feel the difference. It’s had a backwards affect and been serious energy drain. I’ve skipped days of Shakeology here and there before with no lost affects, but to skip days for such an extended period of time does not work for me. I’m glad I know this now. I’m listening to my body and back doing what I need to do, so perhaps this was a necessary lesson. I’ve always looked at Shakeology in terms of what it can do for ME and me only, but it’s benefits were actually helping me to also do what I need to do for my family, while giving me the natural boost I need to do everything that my crazy days demand….. Day 62: 166.4 pounds

I’m not intimidated by slow weight loss, especially since I’m building muscle, and that affects the number on the scale. I’m in a size 6 and have noticed more muscle definition. My abs are especially coming along nicely.
